I have a Nick Nairn recipe somewhere for a caramelised red onion chutney/relish. It's delish but uses tons of onions - 1kg cooked down to a jar and a half of chutney! I'm sure it would work with white onions too. Nice in a Christmas basket maybe?

Thanks Ellie,
Please share and i will give it a whirl. Nobody in my family appreciates stuff like that, so i'd probably just eat it myself. Which is fine, because i eat lots that chutney would go with ... cheese, curries, veggie burgers ...GC Jan £101.91/£150 Feb £70.96/150 Mar £100.43/150 Apr £108.45 app/150 May £149.70/150 Jun £155.15/150 July ££110.46/£150 (includes food, toiletries and cleaning from 13th to 12th of each month. Did chilli in the slow cooker for tonight, didn't have any peppers so put some celery in instead. It was one of the hottest ones I have done for a long time but lovely. Some left which I think I will freeze and have with jkt potato in a few days or so.MARCH £62.38/2500 -
Ran out of a couple of bits so ended up buying milk, washing up liquid, a candle (birthday) and some sweets (party bags) and pop. Ended up spending exactly £9, bringing my total to £449.80/£450!!! 20p UNDER budget! How I have managed that I will never know, especially after meal plans going out of the window due to my health, but I'm over the moon.
Off over to October challenge as today is the last day for me (thankfully!). Might reduce next months target by £20.... feeling positive!
