Enjoy legoland stilty and kidcat!!!
We didn't bother going out today, instead we scoffed baked potatoes watched a bit of top gear. After that I potted about the house trying to get, the washing dried.
Finally got through the mountain of bedding, ds2 has had "accidents" all week do couldnt keep up with it all. But we all have clean bedding so chuffed. I like the little things.
Oh fuddle another one is potato salad, its boiled potatoe mixed with thinly sliced onions, salt and pepper and a few spoons of malt vinegar. once the potatoes are drained and still hot, mix the ingredients together and serve.
Its delicious serve hot or cold.
I mix cous cous with cucumber tomatoes and seasoning. The juice off the salad salad tastes lovely.
Or Italian Potato Salad, roast baby potatoes which have been tossed in olive oil, rosemary and garlic, excellent hot, warm or cold!Must use my stash up!0 -
Sounds lovely and all good home cooked food. It's what I've wanted - lunches that I can make without having to buy much in the way of extra groceries. I just needed to sit down and think about it but you've all given me a head start so thank you!
Lyn I love nothing more than cheese and onion quiche cold so I am thrilled with your idea. I'll make 2 and use it for DH's lunch too.
I've a lady who is in her 80's agoraphobic and dementia. We visit her 2x daily. Each time I see her she's anxious about her food stocks ( we do her shopping weekly, she has no financial control) her fridge is always full with fresh stuff but I think her anxieties are coming because her tinned cupboard stocks are very low. Being the way I am and that I feel better with tinned produce in stocks I am wondering if it might ease some of her worries if we get her soups/beans/UHT milk/rice pud. Do you think it's a possibility and worth mentioning to the office?0 -

that's sounds like a very person centred thing to do. Explain how she shows her anxieties and that this is a way to ease them while not wasting anything . Might be worth talking to any family in her circle of support to.
Rain and wind here. Just invited BIL and kids over for dinner. It's a roast so easy to stretch. But want to make a cake. Now I have a half jar of Xmas mincemeat in the fridge, think it's still on, could I make a Fruit! Cake with It?

MAR I think that shop quiches are most likely made with pasteurised egg and not fresh so that would be why the homemade ones taste more eggy. You could get round it by adding a definate flavouring to your egg mixture, maybe something like tomato puree and use some nice strong cheese (even fresh grated parmesan) which will add a level of depth to your usual cheddar and make it taste less eggy too. I grow herbs which I chuck into fresh quiches by the bucketful and I particularly like to add fresh basil with a tomato and cheese filling and fresh sage and thyme when I make a cheese, bacon and onion one.
FUDDLE is your anxious lady OK with a tin opener? it might be that the cupboards have been let run down if she has difficulties with opening tinned foods?

Cornish I make fruit cakes with mincemeat and they turn out really nice. It will go a long way as it is like condensed fruit.
Fuddle thats a good idea, anything simple that settles her mind is worth it. Cut her stress levels easily and certainly wont do any harm. xxx

Ohh that sounds lovely Jazee!
Well we've had a great time - did the Sealife centre as well but it was a bit crowded. DD liked sitting in the lego bricks but I think her favourite bit of the whole day were the seahorses - she stood in front of the tank for ages blowing them kisses. DS slept all the way round the sealife centre! Typical, we'll add it to the list of things he has slept through. Tired now - just hope DD will go to bed without stressing tonight.

MrsL, I love shop bought quiche, but when I make my own it tastes very eggy. Is there a way around that?
I found that if I add a tablespoon of mashed potato to the mix it tones down the egginess a notch. Cheap too.
I always have a few spoons of spare left over mash in the freezer and bung it in all sorts of dishes.0
