    I just eat what I like even though I often use a calorie site and don't worry if I eat more than it says. Food is not an issue for me and I just enjoy it.

    Tonight its Rainbow trout with vegetables or salad.:)

    The message at the Dr's was ok(relief)they were on the ball just saying it was time for my bloods to be taken. But they'll wait until I am nearer the check up with the consultant in July...They've never done that before...

  • Elderflower Champagne

    4 decent sized heads of Elderflowers
    8 pints of cold water
    2 tablespoons of white wine vinegar
    the juice of 2 lemons and the skins of 2 lemons cut into 4 pieces
    1 and a half pounds of sugar

    put everything into a large basin and stir to dissolve the sugar. Cover with a teatowel and leave for 24 hours. Strain through muslin or a jelly bag and bottle in sterilized bottles with a screw cap. Keep somewhere cool , preferably an outhouse or shed and not in the house as occasionally you get a popped bottle as the pressure builds. I keep mine in the outside shed and keep the bottles covered with an old heavy blanket th contain glass shards should a pop occur. The recipe will not sparkle with bubbles at the time of bottling, the fermentation will take place in the bottle and the champagne will be ready in 6 to 10 days.

    Thanks Lyn, I've put the post number on my signature so I can refer to it. I found the elderflower cordial recipe on the old thread.
    Flowers are de-insected and in boiling water with the lemon rind. :)
    There were loads of elderflowers so if this is successful I am looking forward to making something with elderberries later in the year. :)

    Thank you for your support in DD's eating habits. So much to be thinking about. MIL has taken them both for the night to give me some peace and just be. I feel I need to be honest. I made flapjack for them out of school which they are both nibbling happily on the journey up to MIL's house. Being a person who eats everything other than liver, it's something alien to me. Thank you :)

    The school newsletter came via email early this afternoon. They are needing a dinner nanny for September. I have an application form but so has the lady before me. I just hope my competition don't have my experience because I really would like to do the job. It's perfect for me at this time. Fingers crossed for me.

    I'm off to make a beef casserole with greens and boiled potatoes for DH. Here's to a quiet relaxing evening for me.

    Thanks fuddle. Now I've started looking for elderflowers I have found absolutely loads and loads of sources. :)
    I'm looking forward to receiving my foraging book I ordered the other day.
    Going to be hunting round the charity shops again to try and find the one that Lyn recommended too. :)
    Got a few bids on a few items on eb@y at the mo, so fingers crossed I make some decent sales. :)

  • Have a nice evening FUDDLE, there's no written law that says you have to like liver, I suspect you're in the majority by not liking it lovie!!! I hope you get considered for the Dinner Nanny post, with both your girls at the school it would be the perfect thing for you at this time wouldn't it?     Re picky eaters - a fruit smoothie makes a nice quick breakfast, and most children like them (including 6 foot ones like my OH!).

    In a liquidiser, chuck a pot of natural yoghourt, one chopped banana, a handful of frozen or fresh berries (the frozen ones are often cheaper and give a nice chilled result), some sugar or honey, a dash of fruit juice. Blend till smooth, add a bit of milk to thin down to required consistency. Serve in a glass. Nice and healthy! Or add a muffin or bit of flapjack on the side for a bit of self indulgence.

    If you haven't got a liquidiser, a tall jug and a stick blender will do the same.

    Liver - me and OH like well cooked liver with a dash of sherry, sage and butter to finish off the frying. DS, though, thinks it is the stuff of the devil.
