    I tend to make a batch of rolls or a loaf of bread at the weekend. Filling is ususally a tin of tuna made up with mayo (love watching one of our cats trying to mooch a bit of tuna when making it!). When beimg healthy, will put in some sunflower seeds. This tin will usually last me three rolls, four if I str-eeeee-tttt-chhhhhh it. if three days I will use up cheese or take in leftovers the next two days, if it lasts four, I may treat myself to a freshly made to order chicken salad roll from the wee takeaway shop along the road.     OMG where did the evening go? Need to quickly put my salad (leaves, beetroot and coleslaw) for tomorrow's lunch and try to work out breakfast - I find it such a sticking point when I don't have natural yoghurt in as I can't make toast and am not really a fan of cereal

    I am going to take stew (which is cooking overnight in the slow cooker) and jacket potatoes :)

    Just tasted my stew and it is lush. It should be as it is has been cooking for at least 15 hours in the slow cooker. Even better - there is enough food for tonight's tea. Just learning that being careful doesn't mean being "tight" but making the most of your money. At the age of 40 I'm only just realising this! Daft or what??????

    Not daft at all, and it's a great moment when we do twig little wins like that :) And makes it feel like it can be special / nicer and not just part of a big long haul to clearing off debts or building up savings :)

    Like yesterday, we turned left over bolognaise into a chilli con carni by adding cheap baked beans, cheap sweetcorn, cheap kidney beans and some chilli powder. It made us all (2 adults, 2 kids) dinner plus two smaller portions to put aside and freeze, to reheat and put on top of tortilla chips to make nachos...

    Then I made a batch of pizza dough and seperated out 8 small / medium sized pizza base balls to freeze, along size 30 dough balls! So we've now got two 'Friday/Sautrday fun/movie night dinners from one batch of pizza dough and left over chilli... Each dinner will be a small/medium pizza each and chilli nachos and dough balls to dip into garlic butter for us all.

    At first I felt a tad penny pinching, but when we bagged it all up into 2 carrier bags to pull out for an 'easy andfun meal' one night, it suddenly felt special instead!

    Oh hang on... and the chilli mix filled 4 enchilladas too which went into the freezer... Mr Shortie doubled up the beans and corn that we usually add and it didn't feel to 'beany' at all so there was no detriment to the meals either :) We'll have them with some home made chips next week as I've already menu planned this week (though that is getting slightly moved around already, lol)

    I don't believe I made lunch today. I had made lunch on Saturday to eat today but I scarfed it down Sunday as I was feeling too tired/apathetic to make any dinner.

    This morning, I was busily being disorganised so I was like 'oh well, another resolution dies' as I've no bread, no cold cuts... and then I spotted a lone tin of sardines in chilli oil. Some steamed rice, capers, spring onions and finely-chopped green pepper later, I had lunch! :)

    Very happy with self for the mo' :D

    Sardines in chilli oil? I'm not a fish fan but that does sound nice. I never thknk of adding tinned fish to rice!

    I'm working a 12 - 10 today so will be having my meal at tea time. I will be taking a couple of potatoes that I can microwave and a tin of corned beef. Will also be rooting in the fridge for some cheese. Here's hoping xxxx
