Posted this a while ago on a 'fennel' thread, but you can use any med type veg;.
May come in useful if the milkman brings any other 'new' veg
Mediterranean mixed veg.
As a start I just part boil some potatoes, and cut into chunks (especially nice with new potatoes).
Add any mediterranean vegetables I need to use up in the fridge like fennel, courgettes, aubergines, peppers, etc. Cut into chunks. Add peeled small onions (if not any add chunks of normal). Also some peeled whole garlic cloves if you like them or have too much garlic in.
Toss them in olive oil and sprinkle with any herbs you've got (if you've bought some tomatoes in olive oil or similar anti-pasta, I keep any left over liquid and use that instead).
Put on an oiled baking tray, add tomatoes (halved) at this point if you have ones needing using. Cook in a medium hot oven for about 20 -25 mins, until potatoes nicely browned..
Is very nice served with any grilled meat or fish. I use it to clear up odds and ends in the fridge, so mix varies all the time!!0 -

Moussaka is one of the most delicious dishes I've ever eaten. It's really easy too, so do give it a go. (When I say really easy, I mean it can be as easy or as complicated as you want to make it - personally I think simple is best!).
Mince, chopped tomatoes, some onion, aubergine, plenty of herbs (dried are okay), and some sort of cheese or bechamel sauce are the main ingredients.
Drat, I may have to make one now - chuck us half that aubergine!(drooling smiley).

There are loads of dishes you could make with aubergines. When searching for recipes, try also the alternative names for aubergine eg. eggplant, brinjal (there are loads of other names for it but I can't remember). I used to hate them as a child but now think they're great.0

If you are going with the moussaka there is one spice that you need for authenticity - mace - if you don't have any mace use nutmeg (mace is the outer case of the nutmeg)0

I was just about to come back with an edit about the nutmeg! Yes, that (or mace, although that is a new one on me, but probably much more authentic) is what really enhances the flavour of the dish.
