I've actually cubed one and put it in the slow cooker with lots of other veg and a shoulder of lamb in top. Still have 2 more so can try some of these other ideas.

Chicken and aubergine bake
1 large aubergine , sliced
275g/10oz potatoes , sliced
4 chicken breasts , skinned and boned
seasoned flour
oil for frying
15g/1/2 oz butter
2 onions sliced
1 tsp fresh thyme
salt and pepper
For the sauce
25g/1oz butter
2 tbsp flour
150ml/1/4pt milk
150ml/1/4pt chicken stock
75g/3oz cheese
225g/8oz tomatoes , sliced
Sprinkle aubergines with salt and drain for 30 mins (or not if you don't think that's necessary) Meanwhile par-boil potatoes and drain.Rinse aubergines and pat dry. Beat chicken between cling wrap to flatten slightly.Dust with flour. Preheat oven to 180c/350f/mark 4
Heat 3 tbsp oil in a large pan and fry aubergines in batches for 2 to 3 minutes , adding more oil if necessary. Drain on kitchen paper. Add 1 tbsp oil and the butter to the pan and fry chicken until browned.Remove with a slotted spoon , add onions and fry until soft. Add thyme and season.
For sauce , melt butter in a pan , stir in flour and cook for 1 minute. Stir in milk , stock and cheese and cook until thickened.
Make layers with vegetables , chicken , onions and sauce. Bake in the oven for 1 hour 20 mins
For some strange reason it doesn't mention what you do with the tomatoesI would imagine you put them in the layers , but don't know why they are on the sauce ingredients list

A nice recipe for kebabs using aubergines -
Slice thinly lengthways, salt and leave for 1/2 hour. Rinse. At one end of each slice put a piece of fresh basil and a small cube of mozzarella cheese. Roll, poke kebab stick through, brush with olive oil and grill.
Yummy at a barbie but could be served with rice.Mink0 -
mink - could you use any other cheese? I have haloumi and feta, maybe some goat's cheese in the freezer (but I've never frozen/thawed goats cheese before, so may not be edible) Also have normal cheddars etc0

Haloumi doesn't melt like other cheeses so if you don't mind it still being in a chunk then go for it! I sometimes place a slice of haloumi on top of a slice of aubergine and grill it and it goes well together. Don't know about feta as I've never cooked with it, only had it raw in salads"An Ye Harm None, Do What Ye Will"

sorry TM I don't know - I've only ever done it with mozzarella.Mink0 -
recieved my mixed box this morning from the milkman and in it was...an aubergine!!!!! what on earth do i do with it????? i have never eaten one before let alone cooked one...help!!!November NSD's - 70
