My dad slices aubergine into circles and deep fries them in batter. It goes all hot and soft in the middle and crunchy on the outside. Sounds weird but it's really yum!0

Aubergine is lovely in veggie lasagna.
I always salt mine first, to get rid of the juices that can be bitter. (To do this, slice it up, sprinkle liberally with salt and leave in a colander or something to let the juices run out. Then rinse the salt off before you use it.) I also peel mine most of the time, but you don't have to do this.Sealed Pot Challenge 5 - #1742 :j0 -
One of my easiest and fave dinners, this.
Cut aubergine in half lengthways. Cover with salt liberally and leave for a half hour minimum as salt absorbs the bitter juices.
Meanwhile chop the following into small pieces : 1 large onion, 1 beef tomato, a large handful of mushrooms. Mix in a bowl with 100-200g grated cheddar (depending on how cheesy you like it!).
Rinse aubergine and pat dry. Leave skin on. Scrape out middle section of each half, leaving maybe just over an inch around the sides. Fill with veg/cheese mixture and pop in the oven for 40 mins at 200 degrees.

Random Question, but the Milkman bringing you veg really confused me???
Am I totally dumb or did I miss an earlier thread? Milkmen Only ever brought milk and the occassional orange juice to us!! Who is this new style milkman, and where can I get one who brings veg!!

Halve, oven roast and stuff with a tomato-based filling; top with mozzarella or smoked ricotta.
Slice, griddle and drizzle with a herby vinaigrette. Delicious in salads or as an antipasto.
Smoke over an open flame until soft, peel, and then mash the flesh with tahini, garlic, lemon juice and Greek yoghurt to make Baba Ganoush. Best as a spread in pittas or as a dip.
To make Aubergine Parmigano, pour some homemade tomato sauce into the bottom of a dish, lay slices of fried aubergines on top then sprinkle with a mixture of ricotta, chopped herbs and beaten egg. Continue layering, finishing with sprinkled ricotta on top and a few slices of mozzarella. JO - i get my milk delivered by dairy crest and they provide organic fruit and veg deliverys along with the normal, juices, butter, potatoes, fizzy drinks etc...i get a delivery of milk 3 times a week but on fridays i have a mixed box of fruit and veg (organic) today i got potatoes, carrots, a pepper, an aubergine, onions, some bananas, apples and nectarines. i also have a 2 x 1ltr bottles of cream soda too! mine and kids treat (33p each!)November NSD's - 70

Amazing aubergine recipie which has become such a favourite in my house.
Slice the aubergine lenthways into thinnish slices and griddle so that you have the griddle lines on them. I do about 4 per person.
Grate cheese and mix with garlic, chopped basil, breadcrumbs and egg. When the aubergine slices have cooled down put some of this mixture on the end of one of the slices and roll them up.
Place in large dish and cover with passata and then more grated cheese. Put in 180 oven for about 20 minutes. Absolutely delish!! Serve with salad and some bread.0 -
One of my absolute fav things to do with an aubergine is to make an aubergine and pasta bake.
Slice the aubergine into circles, flour and fry in oil until all the circles are a golden brown. Meanwhile boil up a load of pasta (penne is good for this) for 5/6 minutes and allow to cool. Then, mix the pasta together with a tin of chopped tomatoes that has been whizzed up in the blender and a teaspoon of mixed herbs. Tip the pasta mixture into an oven proof dish and add the aubergine slices (either whole or chopped), some mozzerella and some other grated cheese if available. Bake for about 20 mins in a mediumly hot oven.
This is such a cheap dish and great for using up odds and ends of cheese. The aubergine tastes really 'meaty' and it's really filling served with some crusty bread.0 -
Susan's stacks: Cut stalk off large field mushrooms, place cap side up on tray and drizzle with a little olive oil (and crushed garlic if liked). Stack alternate slices of aubergine and beef tomatoes on top of mushroom, with a grind of balck pepper between layers. Finish with a slice of mozzarella (and basil if you have any). Cook in meduim oven for about 20 to 25 mins ish.I have the mind of a criminal genius. I keep it in the freezer next to Mother....0

Thanks! I didnt know they did that! Ill have to see if I can get that too - it would be really convenient rather than me going all over the place.
