My idea can't be frozen, but you can put chunks of aubergine in batter and deep fry and then serve with a spicey tomato salsa. Melt in the mouth Delicious!

I've made caponata, a kind of stew, before and it has frozen well.
There's loads of different recipes on the internet, but mine had the following ingredients:
Aubergines
celery
onion
garlic
tinned tomatoes
red wine (or some recipes use red wine vinegar or marsala)
fresh basil
capers
green pitted olives
a bit of sugar
toasted pine nuts
I think that's everything! Anyway, The aubergines are chopped up in small chunks and browned off, as is the onion, garlic, celery etc. Then I just chuck in the tomatoes, olives, capers, wine and sugar and let it simmer until it's cooked and the liquid is reduced - can't honestly remember how long, I'm don't follow recipes much for savoury dishes, I'm instinctive and know when it looks 'right'. Sorry if that's a bit vague! Save the fresh basil and toasted pine nuts to put on top to serve.
It can be eaten with grilled meats, or as a veggie dish with pasta, rice, couscous etc. It can also be served as a cold dish in summer.0 -

Let me contribute my 2p worth .
In India we call Aubergine (BAINGAN) or (EGGPLANT)
I suggest putting the above words in google and u will come up with many curry recipes.
My favourite is Baingan Bharta ( Mashed Aubergine) it is YUM!!!

Try this its yummy...
For the curry
# 4 large aubergines
# 1 large onion
# 1 large bag of spinach
# 3 tins of chopped plum tomatoes
# 1 bunch of coriander
# vegetable oil
# 4 cloves of garlic
spices
# 2 tsp of ginger powder
# 2 tsp of cumin powder
# 2 tsp of garam masala powder
# 1 tsp of tumeric powder
# 1 tsp of chilli power
# 1 tsp of mustard seeds
Method
Preheat oven to 200°c
Gently fry the chopped onions in four tablespoons of oil, add the spices and stir well. Once the onions have softened, set the pan to one side.
Put some oil on a piece of kitchen paper and rub the aubergines all over, then !!!!! them about three times with a fork, place on a baking tray and put in the oven on a high heat for about 30 mins. Check them after about 10 mins and turn them over until they're slightly charred on the outside.
Take the aubergines from the oven and cut them down one side and take the tops off. Open them up and carefully scoop the flesh out and place in a bowl. Mash the flesh with a fork.
Now put the spice and onion mixture back on the hob and heat gently, add the mashed aubergine and stir well.
Wash the spinach, break it up into small pieces and add to the pan. Stir well then add your chopped tomatoes.
Leave for about 10 mins on a low heat then add your crushed garlic and coriander, stir well and gently heat for another 15 mins.
If possible leave the curry for a couple of hours to stand and reheat just before serving.0 -
Make a tomato sauce, v.finely dice an onion, celery and a carrot soften in oil add a tin of chopped tomatoes and a tsp dried oregano.reduce to a thick sauce.Meanwhile slice some aubergines brush with oil bake in the oven to soften. Then put together like a lasagne. Layer sauce and aubergines & on the top layer grate some parmesan & mozzarella and bake until cheese bubbles. gorgeous with salad0

Dice the aubergine, dice some onion and fry both gently in the pan with a little oil. Add some cherry or chopped tomatoes and cook through. Add some chopped capers (not too many). Stir through some chopped parsley and a little drizzle of balsamic vinegar. Sounds weird but is divine served warm as a side dish.
Or pierce with a knife, cook in the microwave and make baba ganoush.TL0
