I made them once, and the result wasn't nearly as good as the bought ones.

My mother thought the commonest thing anyone could do (she was big on the idea of 'common') was eat chips with gravy, so of course it's one of my guiltiest pleasures.
  • This recipe comes from a book I've had so long it's in 'old' money, sorry! I've never made it but most of the recipes I have made from the book have been very successful.

    1 1/2lb pigs liver
    60z bacon
    2 onions
    7oz white breadcrumbs
    3oz shredded suet
    2 teaspoons sage
    1 teaspoon basil
    salt and pepper

Mince the liver, bacon and onions. Place all the ingredients together in a bowl and mix well. Form the mixture into eight balls and roll in flour. Pack closely together in a baking tin. Bake in the centre of the oven at 350 F, 180 C, Gas mark 4 for thirty minutes. When cooked, divide with a knife and serve with a rich brown gravy and pease pudding.

When a poor Msc student OH used to buy frozen faggots, I think they were made by Brains which always used to make me smile:rotfl: In those days they cost about 25p for a whole tray!

  • i love faggots although i do buy the mr brains ones as i'm quite squemish and dont think i'd be up to making them myself. i always cook them for the kids but there's always 2 left so they 'find' there way to my mouth!!!
Other women want a boob job. Honey the only silicone i'm interested in is on a 12 cup muffin tray, preferably shaped like little hearts
  • I spent 30 minutes typing in a recipe last night only to post and it told me I was not logged in(but I had) and it disappeared.
My way is mince live, onions and bread ( I add quite of lot of onions and stale bread as these are cheaper).
Add salt, pepper, and lots of sage.
I used cawl to wrap them in (can expalin that bit more if anyone wants the info). Or in balls and put into baking tin.
If not using cawl add a few knobs of butter over the top as this gives a nice sheen.
Mix 2 oxos in 3/4 pt water and pour over the top - this keeps them moist.
Cook as above - the smell is superb.
I have added bacon, belly pork, heart, whatever you have if you want to use it up.
    They will freeze well

Just wondered why I haven't made them for so long - perhaps next weekend??

Why not share the recipe with us all?
I used to be indecisive but now I am not sure.
  • Please post the recipe because I absolutely LOVE faggots.
  • I've found this one, but it doesn't use caul fat.

Hugh Fearnley-Whittingstall's River Cottage Meat Book has a recipe.
It's 250g of pig's liver, 250g fatty pork scraps or sausagemeat, a pig's heart and about 100g of ham or bacon scraps. This is all minced together.
Next, he adds 100g of breadcrumbs or oatmeal plus herbs (sage and thyme),spices (mace and allspice).
The mixture is shaped into 6 balls and wrapped in a square of caul fat or wrapped in a stretched rasher of streaky bacon.
He bakes them in a roasting tin for 50-60 mins at 180c/gas 4, basting with the fat and juices.
    HTH:)
