I made the cereal today. It is delicious and, because I got most of the ingredients at bulk prices, only cost pennies. This is going to be a regular in our house.May all your dots fall silently to the ground.0

Gingham, I've often looked at the cereal recipes in More with Less and been tempted, but I've not yet done one. I like the sound of your adaptation, what temperature did you cook it at? Thanks CMx

I have been picking at it all day. (Blush!) I cooked it a bit too fast. I'd do it at 150 degrees next time. I stirred it every few minutes. I used about thirds each of the liquids. I'll also use more coconut next time. I couldn't really taste it.
It didn't taste sickly sweet or particularly like anything I've ever had before. I like it a lot.May all your dots fall silently to the ground.0 -

Just saw a posting on the Anything Else Moneysaving board about organic fruit and veg boxes and was delighted when I followed the link to discover loads of brilliant recipes on the website. It isn't the same company you mentioned that you use, Gingham. so I thought I'd gatecrash your thread and post a link. I hope some of them will be 'new' to a few people. There are some lovely-looking ones for sweet potatoes(which is something I've asked about on more than one thread:o )

Hello GR, I've just stumbled on this thread. I haven't read the other meal planners yet but I will do soon. I have a veggie family (me and husband, a young lad and a toddler) and I am running a bit short of ideas.
I'm wondering where do I find out about these warehouses to bulk buy? I'm in the Midlands so sadly nowhere near yours.
Also intrigued by the kiwi muffins, may I have the recipe?0 -

Muffin recipe:
2.5 cups sr flour
1.25 cups milk (or less if 'ingredient' is quite moist)
cup sugar
1 cup 'ingredient' (eg fruit/choc chips)
1 egg
90g butter
Sieve flour into largish bowl and rub in butter. Add sugar and 'ingredient'. Add milk and lightly beaten egg and stir loosely. 200 degrees for 20 mins for medium muffins.
For kiwi muffins, just chop up a cupful of kiwi and add as 'ingredient'. I haven't done it yet as we only finished eating the 2 orange cakes I made yesterday.May all your dots fall silently to the ground.0 -
I made the kiwi fruit muffins today. They taste good. It took 2 and a half kiwis to fill the cup I used. They were very ripe though and quite watery. I cut the milk down to one cup but it would have been better with slightly less milk I think. They didn't rise hugely well but I suspect that's because I didn't cook them fast enough. I had some cereal in the oven and didn't want to burn it. I think they need to be at about 180-200 degrees.
DH's tip if they look like they're going to crumble or sink when they come out of the oven is to put them on the tray top down. The crust on the top will stop them falling through the cooling tray and they will hold their shape.May all your dots fall silently to the ground.0 -
