Gingham's vegetarian meal planner - SUMMER

    Breakfasts:

    pancakes with warmed peach slices
    h/m cereal with raisins and apple
    grapefruit and toast
    scrambled egg on toast, fresh orange juice
    h/m cereal with dates and bananas
    porridge with grated pear and raisins
    h/m cereal with apple and banana

    Lunches:

    cheese, lettuce and spring onion sandwiches
    squash bread with mushroom pate, carrot and seed salad
    lentil and leftover veg soup
    spicy pate, lettuce and spring onion sandwiches
    squash bread with poached eggs
    Leftover chilli with bread
    lentil and leftover veg soup

    Dinners:

    veggie burgers, coleslaw, boiled potatoes
    cabbage gallette and roast tomatoes
    pasta with tomato sauce, runner beans, courgette and mushrooms
    3 bean chilli with runner beans, green pepper and mushrooms
    pizza with pepper, sweetcorn, mushrooms
    veggie burgers and squash bread
    take-away :-)

    We were so taken with the squash bread that I'm making it again tomorrow. My son has decided he doesn't like carrot in the veggie burgers so I'm going to try it with chopped mushroom instead for a change. Fingers crossed.

    We're having take away with some holiday money left over too. Deep fried tofu in plum sauce...mmmm. Can't wait to learn how to make it myself though. ;):D

    Burger recipe:

    I'll let you know what they taste like later but here's what I've done:

    1 cup of breadcrumbs
    1 cup of mushrooms
    1 tin of black eye beans
    tbsp tomato puree
    1 egg
    1/2 tsp each of dried parsley, thyme and sage
    h/m flour to coat

    Blitz bread into crumbs and empty into mixing bowl
    Blitz mushrooms and add to bowl
    Blitz beans and add to bowl
    Add herbs and mix
    Add beaten egg and tomato paste. Shape into burgers, coating with h/m flour, fry.

    Edit: yes. that works well. I'd give them a bit of time in the fridge to firm up though as one crumbled in the pan.

    Great thread Gingham, it has given me lots of ideas. Has anyone got any ideas for turnips? Our veg box contains some beautiful small turnips, but apart from using them as part of a vegetable soup I have run out of ideas. Any suggestions welcome.

    We had a lovely quick supper last night that I thought I'd share. It's adapted from one in *Jamie's Dinners*

    Put pasta on to cook. Meanwhile, in a bowl, mix 6 chopped, fresh, ripe tomatoes, 2 handfuls of rocket, 2 handfuls of fresh herbs (I used coriander, basil, oregano, mint from the garden) handful of chopped olives, 6Tbsp olive oil, Tbsp balsamic vinegar, season. This serves 4.

    Once the pasta is cooked, serve onto plates, and pour over the sauce. The Small Penguins had parmesan on theirs, mine was nice without.

    I have a phote which I'll post if I can get it off DS's phone! I've mislaid my camera.

    Rocket, along with the other herbs I used, is very easy to grow, if anyone wants to have a go next year.

    Thanks. I'm really glad it's been helpful.

    I've not been getting huge variation in my veg box so there's been nothing very interesting to post about. (Maybe it's because of the heavy rain.)

    I'm getting a delivery today. I'll try to think of something a bit different and post later on!

    I'm pretty new to the forums and as we have a veg patch that has gone into over-drive (especially the courgettes!) I've been reading your threads and going - wow! So thanks so much for posting them, they are definite inspiration for us meat-reducers (as I found out we're called according to the newspaper!)

    One question - you listed courgette and tomato tart as a supper dish. I followed the link for the pastry - which sounds great. But what do I do then? Is it just courgettes and tomatos, or do you add something else? Is there any chance you could post a recipe (or link) when you get a chance.

    Thanks very much - and in the unlikely event I come up with a recipe which no-one has thought of I promise to post it!
