Hi, Tink. I cook for 2 adults and a toddler, sometimes we go to friends' houses and sometimes they come to us for lunch.
If you're considering a veg box, some do one for one to two people. I know Farmaround do one. Some of the recipes are easy to freeze so you can make a pot of it and seperate it into portions just to reheat. The chilli, curries, easy pasta sauce and (so I believe) the veggie burgers all freeze well.
I'll be linking to the older threads where the recipes for some of these can be found a little later when I have more time.

Thanks for another great thread Gingham Ribbon. I'm not a vegetarian but we have at least one veggie meal a week and I get alot of inspiration from you.
I hope you don't mind GR - I have another recipe for Butternut squash if you're interested?
A friend, called Liz, gave it to me, not sure where she had it from, so in our house it's called Lizzie's Squash Bread.
I small butternut squash
300g plain flour
2tsp baking powder
1tsp dried mixed herbs
2tbsp olive oil
set the oven to 200c*
bake the whole squash for 45mins* and then leave it to cool for 30 mins
peel skin, cut away stalk, scoop out seeds, mash and measure out 375g
add flour, baking powder and seasoning. stir in 65ml cold water, olive oil and mix together. place on lightly floured surface, knead until soft and spongey.
put on an oiled baking tray and bake for 30-35mins
I've found that a squash weighing just over a kg makes 2 loaves
*the temperature and timings are for my fan assisted oven so you may have to jiggle it.

LOL What a disaster. It's not my first kitchen disaster but it's the first that was totally unsalvageable. It went down the sink. If it didn't have mint and cream in it, I'd have used it as stock for something else, but I couldn't think of anything to do with it. It was totally rank.
It was no cabbage galette, that's for sure! I fear this thread has not got off to a flying start!

GR please let us know how you get on with the squash bread. I bought a squash a couple of days ago and was going to make soup. However, that evening I ran out of time and so wasn't able to prepare what I had planned for the evening meal. DS has been away for 10 days so I only had to feed me and DH. I decided to cut the squash in half lengthwise and de-seed it. Brush it with a little oil and honey and put it in my combi oven for 10 mins. While it was cooking I rustled up a little stuffing with spring onions and mushrooms, added s+p, a little parmesan and a little of a HM tomato sauce. Covered the squash with that and cooked for another 10 mins. I then sliced a bit of mozerella over the top and cooked for another 5 mins while I made a side salad. It was absolutely delicious. So much so that I went out and bought another 3 squashes and can't decide what to do with them so the bread sounds interesting. (I'm also saving all the seeds and going to try to grow my own.)0

I am never going to attempt to peel a raw squash again. I've just roasted the butternut squash for Lizzy's bread and the skin just fell off it. Just off to make the bread! Can't wait.May all your dots fall silently to the ground.0

WOW! That bread is gorgeous! Thank you, HopeElizzy. I served it hot, buttered with raisins and thriftlady's baked seeds. My toddler was chuffed to bits!
It needed more flour than in the recipe. Next time I won't add the water till I've mixed everything else. It probably depends on how wet the squash turns out to be. Going to use the rest of the squash for muffins.May all your dots fall silently to the ground.0 -
Good luck with growing your own squash, organic wanabe. I've saved your details of your squash recipe to try another time. It sounds lovely. I don't have a microwave, so I'll do it in the oven.
I went to a warehouse and stocked up on lots of organic pulses, seeds, flax oil and bits and bobs so that should keep me going for a while. £36 to add to the shopping total. (Not including the £16 I spent on 80 teddy bear shaped organic, junk free lollipops I bought for my son and his mates! They'll be taken out on lots of picnics over the summer.May all your dots fall silently to the ground.0 -
