I love Special fried rice you can put anything into it mmmmm!!! and it's so cheap. I put my rice in the fridge over night and add eggs to the rice to make egg fried rice.

How about slicing it into thin strips and using it in a Chinese stir fry? Throw the meat in once the sauce is thickening and simmer gently for a few minutes before serving.
Another thought is to use it in the Thai dish, Hot and Sour Soup. Again, cut into strips first. I have a simple recipe on my blog, if you look there under soup. (Sorry, rules means I can't link.)"Be the type of woman that when you get out of bed in the morning, the devil says 'Oh crap. She's up.'

ummmm.....that's all i can think of for nowOne day I will think of something profound or witty to use in my signature. But until then I'll just say cheers to all who contribute to MSE. :beer:0 -
I slice the joint up and freeze the slices. When I want to use them up I then put them in a roasting tin with some gravy and heat through.0

Taking Carolwat's idea a bit further, I use the reheated slices with some apple sauce and stuffing in hot baguettes as a kind of hog-roast.

Similar to PipneyJane's idea, I would fry them with some onions and peppers and make some fajita's!
