Maybe shredded and used as a taco or fajita filling?
You could use a packet of spice mix or you could use garlic,cumin,smoked paprika,chilli flakes and onions and peppers.

OK cooked a massive lump of pork last night and have loads left over. Had planned to use some for today and maybe freeze the rest but im braindead with no inspiration at all so please give me some nice ideas for dinner.

How about slicing some of it thinly and do a stirfry with veg and mushrooms, with either sweet chilli sauce or soy sauce? I tried this recently and it was lovely. We had it with rice, but noodles would be good too.0
