  • So here's the deal....

    On friday night we bagged a massive joint of Mr T's finest pork which should have been a whopping £13.19 for a stunning £1.21. I actually could not believe my luck...

    So I roasted yesterday and it was fab. I'd like to do something chinesey with it tonight so i'm armed with an egg fried rice recipe but i don't really know what to do with the pork? Is it okay to re-heat? etc...

    Any suggestions? I have chinese 5 spice and all the usual cupboard items...

    Can anyone help me make my evening 'pork tastic?'

    What about sweet and sour pork? Recipes for sweet and sour sauce here

    This is something I've made with leftover pork a few times. It's a pretty forgiving recipe and if you don't have all the ingredients you can mix and match and use what you do have.

    You'll need:

    leftover pork, thinly sliced
    1 red pepper (or any other coloured, I just prefer red)
    1 or 2 chillies depending on how hot you like it
    chopped onion
    3/4 cloves of crushed garlic
    4 chopped spring onions


    Plus ingredients for the sauce:

    Stock cube dissolved in ¾ cup of boiling water
    2 teaspoons of sugar
    2-3 tablespoons of soy sauce
    2 teaspoons of vinegar
    2 tablespoons of ketchup
    a few drops of sesame oil
    freshly ground black pepper

    Make the sauce by putting all the ingredients into a bowl, mix and put to one side.

    Fry pepper, chillies, onion, and garlic over a medium heat for a few minutes.

    Add the sauce ingredients and bring to the boil.

    Finally, add the sliced leftover pork and spring onions and heat through thoroughly. You don't want to cook the pork a second time as that would make it tough...just reheat until it's piping hot.

    Use the corn flour mixed in a little cold water to thicken the sauce if you think it needs it.

    Serve with boiled or fried rice, or noodles.

    I have used leftover roast pork to make curries and stir-fries. you can use any recipe just remember that the pork is already cooked so it wont need the cooking time for uncooked meat.
    for example, if you were making egg fried rice and wanted to put in onion and peppers, then instead of cooking the pork first you would do the veg - then put the pork in and heat it for a minute, then add your rice and eggs - or eggs and rice if you do it that way round!

    I am rather envious of your bargain - Pork is one of my favourite joints but its a rare treat these days! it just costs so much more than a chicken!

    I usually do a stir fry like pink or you could mince the meat and add herbs and do patties or meatballs?

  • I've got half a pork lion leftover cooked. What could I make with it? I have veg (leeks, carrots) and potatoes in the cupboard.

    I'd make a pie with the meat, veg and some kind of stock/gravy. You can top with mash, pastry or a sort of scone mix, although technically then it would be a cobbler I suppose.

    egg fried rice? stir fry? pie is good too, as suggested above. Or a classic pork and apple baguette, yum!
