Leftover Pork

Cut the leftover slices quite thick, mix some honey, wine or water (to keep moist) with mustard and spread on top and then sprinkle with grated cheese, put in shallow dish and heat in oven for a short while -serve with new or jacket pots and salad - absolutely delicious.
Similar is apple sauce and cheese

There's a recipe in the Economy Gastronomy book for lasagne made with roast pork which I've tried and its really good. Its one of their tumbledown recipes that cooks a tomato sauce with the roast pork but if you haven't done that you basically mix in finely chopped pork with tinned tomatoes, make a white sauce and add finely chopped raw broccoli (stems and all) and make up like a normal lasagne with some cheese added to the white sauce layers. They used some special cheese in the book (could be manjego or something like that) but any melting cheese works. This freezes well too.I was off to conquer the world but I got distracted by something sparkly

Hi everyone,
I roasted a pork joint today (only 2nd time I've done it and it was lovely, v pleased with myself). As we have cut down our meat consumption and the joint was on the big size, I have loads left.
I need some inspiration please for what to do with leftovers. Last week I stretched a chicken t-h-r-e-e days but still had some over and was worried about keeping any longer and binned remains. This week I want to use every last scrap of meat. I'm sure this Q must have been asked and answered before but can I find it?!
I cooked the joint this pm and we will have a simple meal of cold pork, mash and steamed vegs tomorrow but there is still enough for at least 2 more meals if not more if I bulk out lots. I think I will need to freeze the extra meals so need freezable ideas. We are a family of 4 including 2 young 'uns.
Any suggestion gratefully received!

Bless you for trying. I did an advanced search on Old Style (for titles only) contain the words leftover pork. If you take a quick read of this thread it explains the search better than I can. Anytime you are looking for something in particular, give me a shout/private message and I'll help if I can.
I hope you find something on that thread to help.

hmmm - I love roast pork and it isnt the easiest roast to get right - so well done you!
when I have leftovers I like to do some thin slices that go straight in the freezer, they are so useful for sandwiches or with salads.
the next night after a roast pork dinner tends to be curry - with a creamy mild sauce, pork is absolutely delish. you can freeze larger chunks or slices if you dont want to use it straight away.
anything else left, tends to get used either thrown into stir fry veggies at the last minute to warm up or you can make (or buy) a satay sauce and warm it up in that - served with rice etc its lovely!0 -
thanks meritaten I froze rest of pork yesterday in 3 separate batches and have tons of ideas in the link so will pick 3 separate meals, things I haven't tried yet (which is um most of them!) I need some adventure in my life….even if it is just cooking!
From now on unless I know I can safely use all the meat left (or whatever foodstuff) AND have an idea what to actually do with it….its going in my new pal, Chester (chest freezer). What happens though when Chester’s full!!0 -

thanks Pink. I don't think coming on here late eve when my brain's given up for the day helps. Will have a play about with searches when I have some spare time maybe0 -
Pasties are good I just get those pastry sheets, chop up the pork - boil some diced potatoes and onion, when cooled add a pinch of sage, salt & pepper, hey presto. I always like to serve them with battered Bramley apple rings, peas & gravy.
Make as many as you can and freeze some or put in lunch boxes.Never play with your Bellybutton your Bum could fall off.:rotfl:0
