    Yesterday i cooked braised steak and onions in mine - which we all had for tea last night with roast potatoes and carrots (which i had par-boiled on sunday and frozen) and as hubby goes out on a Monday I made him a pie with some for when he got in later.

    Whats left has been shredded i've added sliced peppers and red onion, 1 1/2 tea spoons of chilli, 1/2 tsp coriander and a carton of passata and will be cooked and served in wraps for tonights tea

    We had chilli using mince a few days ago but i wanted to use the leftovers as i have no rooom left in my freezer!

    morning all! Today I am baking fresh bread and have carrot and pumpkin soup in my slow cooker, its a normal recipe, I am just replacing the boiling part with 6 hours in the cooker:

    Ingredients
    • A pumpkin.
    • Some carrots.
    • A medium onion.
    • Stock (Chicken or Vegetable, the choice is yours)
    • Some coriander, to taste.
    • Some parsley, to taste.
    • Salt and Pepper, to taste.
    • Butter
    • Single Cream
    Could it be any easier?
    Recipe Remove the seeds and fibrous material from the pumpkin. Peel it (Easiest with a large – sharp -knife, and larger pieces). Cut the pumpkin into small pieces.
    Peel the carrot and onion, and slice.
    Melt some butter (enough to cover the pan, so not a huge amount) in a large saucepan. Put the onion, carrot and pumkin into a large saucepan, and about half a cup of water. Put the lid on, and sweat the ingredients on a low-medium heat for about 15-20 minutes.
    Pour the stock over the ingredients. Bring to the boil. Blend the ingredients with a blitzer or similar. Add chopped parsley and coriander.
    Serve with a dash of cream.

    EDIT: just to add, i would mix flour together with water to make a little paste, about 1-2tsp worth and add to sc just before the stock. Its quite watery if not. Its very nice coarsly pureed as well, I did some for my wee man, 1 year old, he was most impressed :)

    Sunday's effort was another depressingly awful attempt at soup. It was so foul it went in the bin, a whole carrier bag full - the 6.5 litre crockpot was full to the top with everything I had handy, and cooked for 8 hours. Marrows, radishes, onions, carrots, cauliflower, tomatoes, and a pack of Morrisons soup mix (lentils etc) that was two years out of date but hadn't been opened. Also oxo cubes, passata, garlic and tomato puree. Didn't have cumin so I used coriander and a dash of curry powder. Maybe I should have left out the passata... or the marrows... or the cauli... I'm doing something terribly wrong with these veg concoctions, it's the second one that's been binned (not sure if it should have gone in the compost bin). I love tinned soup, as well as the Covent Garden ones, but come to think of it I've not seen marrow soup. The hens can have the remaining marrows and I will stick to buying soup, resenting what it costs isn't as bad as throwing food away :-(


    I think the radishes, and cauliflower would be the culprits in your soup. I love cauli, but find it foul if its cooked too long.

    Meatballs in bolognese sauce.

    Turkey mince, garlic, breadcrumbs, half courgette/carrot/pepper, onion, basil, s&p and passata.

    Not made meatballs before and I think they may be a bit large - used an ice cream scoop but half sized the mince and browned before adding. Fingers crossed...

    Took the plunge again with the SC after it lay unused for an age on the worktop. Reading the thread yesterday reminded me I had some long frozen mince and I wanted to start emptying out the freezer ready for Christmas.

    for once remembered to take it out last night and in it went browned today with the usual onions, tin of plum tomatoes, tom puree, garlic and stock cube.

    Fingers crossed it's ok, it's the first time I have done this.

    Feeling a bit tempted to cook a chicken in there at the weekend but not too sure how

    1 tbsp olive oil
    6 sausages
    1 medium onion, chopped
    1 large carrot, chopped
    1 stick celery, chopped
    1 medium red pepper, chopped
    1 organic chicken stock cube
    2x400g tins chopped tomatoes
    1x410g tin cannellini beans, drained and rinsed
    1 tbsp tomato puree
    1 bay leaf
    1 tsp dried oregano
    1 tnsp good quality pesto

    (1) pre-heat oven to 180C, Gas 6, heat oil in casserole dish and brown sausages for 5 mins
    (2) add onion, carrot, celery and pepper to soften, adding a little more oil if needed and cook for 10 mins
    (3) dissolve stock cube in a mug of boiling water and add to the pot with tinned tomatoes, cannellini beans, tomato puree, bay leaf and oregano, bring to a simmer
    (4) cook in oven with lid on for 30-40 mins, stir in pesto and serve immediately

    Except put it in slow cooker . Hubby did it .. cant wait he says it smells yum
