Its nice to see you are sticking with it pammie39. Loads of people of here have done the gammon in coke, I dont really like gammon, so I havent tried it. But go for it, I dont think you can go far wrong. You could try doing a forum search on gammon and coke, although you might find your self and me now! lol
I have put vergtable curry in mine today, or Butternut Squash Vegtable Batli to be more precise, thanks to the Pataks recipe collection. I am worried though as need to serve it about 6pm and only got it in there an hour ago, its on high, but still looks a bit limp. Fingers crossed.
I was trying to do some online food shopping for slow cooking next week, but I dont feel up to it. (I think im poorly) So just going to have a rest.
Hope all of todays slow cooking comes out yummy and there are lots of good dinners tonight, mine included. heheheDebt free since July 2013! Woo hoo! The bank actually laughed when I said I have come in to cancel my overdraft.0 -
I have done the gammon in coke many times. I start off with the joint in a pan of cold water which I bring to the boil . At the same time pre -heat slow cooker and then put a large onion, quartered, in the bottom with some whole peppercorns. Drain the ham & place on top of onion. Heat a can of coke in a pyrex jug in the microwave and pour over the meat. Cook on auto for at least 5/6 hours. HTHNothing is so fatiguing as the eternal hanging on of an uncompleted task. Hi,
got mine a couple of weeks ago, £7 from Asda, so still experimenting. I'm reading this thread from the start, up to page 46 so far.
today I have in mine...
500g diced lamb
4 sweet potatoes
2 normal potatoes
2 large carrots
4 leeks
olive oil
salt
pepper
mixed spice
2 veg stock cubes
and 1 pt of water
can't wait to taste it, smells great.
I am finding the most difficult bit is not lifting the lid to stir..

Caribbean Chicken
3 tbsp veg oil
2 large onions, chopped
4 sticks celery, chopped
3 carrots, sliced
500g mushrooms, sliced
2 red peppers, sliced
8 chicken joints, skinned
400g can sliced peaches
400g can pineapple chunks
10 tbsp cornflour
3 tsp paprika
3 tbsp soy sauce
3 tbsp worcestershire sauce
8 tbsp malt/wine vinegar
1 litre boiling water
salt & pepper
Fry onions, celery, carrot, mushroom and pepper in a pan.
Add chicken joints and fry until browned all over.
Drain peaches and pineapple, reserving juice, and add to pan.
To make sauce blend cornflour and paprika with soy sauce, worcestershire sauce, vinegar and reserved juice, add seasoning, boiling water and pour into pan.
Bring sauce to boil, stirring continuously.
Transfer all ingredients to slow-cooker, cover and cook 5-7 hours.
Forgot to add that these are the quantities to fill the large 6.5litre cooker so use half quantities obviously if you've got a smaller cooker or want to cook less
Sounds nice,mmmmm!!!:T0 -
