    I need some inspiration!

I need some veggie inspiration .. have got tub of cherry tomatoes ; 2 leeks ; 1 large marrow; couple of peppers ; courgettes; red onions; various dried beans; fresh sweetcorn; cubed and frozen swede. Oh and 1 1/2 sweet cabbages and a big bag of fresh spinach. And loiads of potatoes.

How about Ratatouille? Fry some peppers with onion and garlic (I usually do about 2 peppers with an onion and a couple of garlic cloves) till softened, about 5 mins. Add a few courgettes (thickly sliced), an aubergine (cut into small cubes) a tin of tomatoes plus some fresh (cherry toms would be good), a good spurt of tom puree (2 tbsp?), salt and pepper. I add fresh thyme as I have it in the garden. Heat till bubbling and put in slow cooker on low for 5-8 hours. We have it either with rice or couscous as a veggie dish (can add grated cheese), or as a "side veggie" with salmon or pork chops. I know you don't have freezer space, but it does freeze well, I make vats of it for the freezer!

I make veggie cakes for my boys sometimes - adding leftover cooked veggies to leftover mash and frying like a fishcake. Always goes down well. And I find I can get them to eat spinach if I hide it in a fritatta!

Hope this helps. Have you tried the recipie index for more ideas?

    Hi kellitots!

I did my first whole chicken in the SC this week, didn't add anything other than S&P, I am still raving about how nice it was - I hope you enjoy yours just as much

I'm working my way through this thread backwards so don't know if this has been said yet or not...

If you're doing a whole chicken in the SC. Scrunch up balls of tin foil and put them on the bottom of the crock with your chicken resting on top and you'll get a nice brown skin!

Who said slow cookers aren't sexy? :p

We need to dust ours off, it gets lots of use in the winter. My favourite is TVP and courgette stew with tomatoes.
  • Oooh, Mimbellina, I would love to know the recipe of your TVP and courgette stew! Sounds very tasty and wintery, and I am yet to try TVP in my slow cooker! :D

  • 500g minced beef (weight probably less as fried & drained fat this morning)
    2 onions, chopped
    1 large carrot, grated
    1 leek, finely chopped
    2 peppers, chopped
    2 beef stock cubes
    2 tins tomatoes
a good squirt of tomato puree
a heavy-handed 'shake' of mixed herbs
    a generous handul of lentils
    about a pint of water

As I did a couple of weeks ago, hoping to remove the more 'solid' contents when I get home, and put in a dish to be topped with mash tomorrow, and add part-cooked pasta to the more 'liquid' contents in the SC & cook for another hour to be 'beef & veg pasta bake'...well it worked last time!
