I just used pork sausage and took the skins off rather than get minced pork shoulder. It's very tasty though!

I just left it out completely to be honest, no replacement liquid.
Sorreeeee.I can just about handle white/rose wine without too much of a visible shudder but red wine.. no. At least not yet. I'm not much of a drinker at all really.
