Ideas needed please. I have a packet of smallish corn tortilla wraps (each one about 6 to 7 inches diameter), I also have about 6oz cold roast pork I need to use up and 3 mouths to feed. I have plenty of mushrooms, peppers, onions, celery, carrots, plus 1 tomato and 3 inches of cucumber.....what I am lacking today is energy and imagination......H-E-L-P please !
I would chop the pork small, dice the mushrooms, peppers and an onion, fry those in a little oil. Do you have spices? I'd normally add ground cumin, ground coriander, ground cardomom and a bit of chilli, then maybe a dessert spoon of tomato puree. Then separately dice an onion, the tomato and the cucumber, mix together with a little salt as a sort of salad. Then each tortilla wrap gets a serve of hot and cold and rolled up.Softstuff- Officially better than 0070 -

Ummm I don't know, I have never tried Mexican food, is it spicey? I have awful reflux at the moment so am trying to stay away from too much spicey food. Come to that I have never tried corn tortilla before either, I didn't buy these, my neighbour gave them to me as she didn't like them.

I would chop that lot, and then boil some rice. When the rice is boiled, add to the chopped meat and veg, mix well. Microwave the wraps for 30 seconds per each 2 wraps, place the filling in the middle and fold over. I would usually add chilli powder to the mix, but you say you have to be careful with spices...... I would also usually serve some sour cream or reduced fat onion and garlic dip with them.0 -

Thanks JKJ, leave out the chilli and the onion and it's not spicy, just tasty. But if you have reflux I'd avoid the tortillas themselves, corn tortillas make me terrible. Do you have any rice or pasta? Give someone else the tortillas and serve the recipe with that!

Thanks again Mrs CD for the marmite pastry tip plus your suggestions about the pastry - I'd forgotten about lard. I'm nipping to Sainsbobs at lunchtime to get some Value Teabags (wonderful - in case there is anyone out there who hasn't discovered them, and they are Fair Trade!) so I'll get some lard too: boy what a classy shopping basket that'll be!!
Tonight's supper is going to be the rest of the pulled pork stretched with a tin of tomatoes and some cannellini beans. My tins of cannellini beans are enormous (twice the normal size) so I'm going to try and invent some sort of bean pate/hummus with the rest of the beans. Anyone got any good recipes?

me too. well almost. Last bath I had was in a freestanding clawfoot bath in a holiday home. It was so deep I could have drowned and no way could I get myself up
Just heard that ds and his oh will be here 2 nights over christmas, so will be getting some paleo meat in for him and veggie food for her. We are all going to dd for christmas ie 11 in total and they don`t find money growing on trees. What can I take to help, that doesn`t need buying the day before?0 -

A couple of handfuls of beans, a drizzle of olive oil, a clove of garlic, salt, pepper, half a teaspoon of cumin and whizz. Though if I have canellini beans left I tend to just pop a little olive oil and salt on them and eat them as is, coldSoftstuff- Officially better than 0070 -
kittie - could you take dessert? you could get a Christmas pudding sorted now and maybe make a frozen dessert as an alternative.0
