White choc is notoriously hard to work with....want to show me the recipe and I'll see if it's anything obvious? I had the devils own job getting my fudge to work consistently until I changed the recipe. Anything that doesn't set will keep practically forever in the fridge and can be heated for ice cream/pancake sauce - ask me how I know
Kate
It was meant to be 'foolproof' - an easy one that the children could do which didn't involve thermometers or getting too hot. But the dark choc one was EXACTLY the same. Still, they won't mind! And they didn't like the dark one anyway so that's cut up for hampers and I'll freeze it. Do you have a recipe which works consistently? Would you mind sharing? I have a thermometer now but historically I have always had problems getting fudge to set. Fudge just doesn't like me.0 -

Yes I do have a consistent recipe, and it was someone on MSE who highlighted it :rotfl: it's the Carnation Milk one:

It does need a thermometer, but watch the video, the first time you make it and it does set, you will know what to watch for. It has to get to soft boil, and you cannot take your eyes off it or stop stirring for a moment! I've now made about a dozen+ batches of this and it's set every time. I Make it in my pressure cooker (without the lid of course) as it's a heavy pan, and I beat it in the kenwood, cool it to 110 and carefully transfer to a heat proof bowl. Get everything prepped (tins and stuff) first as you don't have much time to play with once it starts to set. I'm using a loose bottomed tin, lined and I cut a piece for the top too. I use the loose bottom of a second tin the same size to put on top to press it flat into the tin!
I'm about to try the choc recipe off the same site, and that's just a melt and stir one. I'm pretty sure if your white fudge didn't set and the dark did, and it was the same recipe it will be the higher fat content of the white choc. The cheaper white chocs have all sorts of other stuff in, including flour in one brand!

Haven't had the chance to read back all the thread today but a question of you all, bit personal and it comes down to personal opinion in the end.
All that I own is many years old and/or second hand(refurbished)and any new stuff is worth very little in value.
If I don't take into account the replacing of carpets and possibly curtains/bedding and as my clothes are charity shop bought and only worth 99p each...my personal possessions(slow cooker, microwave oven, halogen oven, computers, DAB radios, washing machine, tumble drier, beds, TV's, fridge/freezer)even using their original prices and probably over estimating I think the value would be lucky to reach £3,000-£3,500.
Is it worth bothering with contents insurance? Is it an un-neccessary extra cost for someone like me?
I have had a quote from Mum's insurance company and for years we had an unlimited policy and have probably overpaid many times over(stupidly)and never made a claim and we were paying silly money.
The documents came today through the mail(under my name now)and it is £195.09 annually. They have quoted me a new policy obviously cutting back on various things, the original policy had benefits that I probably don't need.
With a kind of cash back of £15(if I keep the policy for 80 days)they can do it for £87.52 and that is quite a saving(£107.57)but even though it is a basic policy according to them I think the cover is £50,000.
But my HA has a deal with another well known company and they can do £9,000 cover for £45.36 Standard or £64.73 Standard Incl Accidental Damage.
If I roughly pay the same amount as the first quote from Mum's company with this other company I can have £12,000 cover and it would cost £60.48 Standard or £86.31 Standard Incl Accidental Damage.
Or finally get £16,000 cover and it costs £80.64 standard.
Should I even bother? If I do would you switch to the second company and do you think I will be ok with standard cover and the lowest quote which is £45.36.
I can save totally by paying nothing or if I pay only £45.36 I have saved £42.16 off the new quote I was given.
I used to just pay the insurance and not really think about it but now it is different.

Bit windy here too but no rain yet.
Kate i'll try that Carnation one, I had it in my bookmarks.
Just had a bizarre conversation with my grandma who is 90 today and rather confusing on the phone.
Pops for insurance purposes you need to forget your stuff is old, and think how much it would cost to replace the items you need if for example they were destroyed by fire. Make a rough estimate and put your details into something like moneysupermarket.com to get quotes. The first figure is definitely too expensive by far, my contents and building insurance together is less than that.0 -

No rain to speak of, a little windy but I have seen worse and very dull but it will soon be coming in dark again anyhow..."A government afraid of its citizens is a Democracy. Citizens afraid of government is tyranny!" ~Thomas Jefferson
