    Good morning all

The sun is shining again and it is another beautiful day. I know I have not posted for a while but I have kept dipping in to see how you are all doing.

I just wanted to share my low fat potato salad recipe. I dice salad potatoes leaving their skins on, boil until tender then drain and leave to cool. Once cool I mix with a good dollop of fat free greek yogurt and freshly chopped mint. My brood love it.

My new job is going well and all of the team are good to work with. Mr VP is working again and has managed to get a temporary contract at an airport until October. It is only 20 hrs a week but there should hopefully be the option of overtime which would be great because the cost of petrol to get him there and back is astronomical.

The greenhouse and veg plots at home are looking good and the allotment is taking shape. The salad leaves, spinach and radish are cropping well. For the first time ever we are going to have a bumper crop of black currants and gooseberries.

DD1 is back from uni for the summer and DD2 will be finishing college early as they have now completed all of their course work for the term.

I am still having problems with my back (some of you might remember the car accident I had last October) and have just started physio again. I still can not do any Bank shifts at the local hospital because the shortest shifts are 6 hrs and I can only manage 3 hrs max on my feet at the moment. My Bank shifts were our way of keeping our heads above water.

Things are still tough in the VP household but the sunshine seems to make it all a lot easier to manage.

Hope you all get a share of the sunshine.

    Mrs VP
I am playing all of the right notes just not necessarily in the right order :D.

    Morning toughies

The sun's shining here again, can't believe how nice it's been for so long. Washing will be going out soon, very satisfying to see it all blowing on the line!

Re the people with alcoholics in the family - from my experience with a family member I know it's never easy at the best of times, but I agree with keeping your distance when it gets too toxic. I've banged my head on that particular brick wall so many times, too.

It was our wedding anniversary yesterday - 27 years! :j Can't believe it's that long; we went out for our tea, not really OS, but we didn't spend too much. Cheap tea tonight to make up for it! :D

Need to do a proper stocktake today (think I said I was doing it the other day but time and tide...!) and really cut down on costs, food prices here are really rocketing!

See you all later, hope you have some sun and an easy morning!

    Good Morning...

At this minute at peace with the world Lyn...plans changed as I am still resting(catching up on energy)so the trip to Saltburn is off(pity as there is a concert on the bandstand this afternoon, a kite making/flying contest and a great Farmers Market with lots of new stalls and sitting looking at the sea. Will do it again soon.

But will drag myself to Darlington nearer to here and perhaps Durham tomorrow.

Made the effort late last evening to do a "Proper" meal after my cobbled effort earlier in the afternoon, there's too much good stuff not waste in the food store and fridge/freezer not to waste. When I eat and try to get fancy in the kitchen...you know I'm back to my usual self. Been posting images on another thread on MSE)http://forums.moneysavingexpert.com/showpost.php?p=61734361&postcount=16138

    Thanks x

Ooh thank you sooooo much - I have copied and pasted. Some things I have thought of but others not. One thing I don't need to carry is alcohol, thank goodness. THere's only me and DS and I don't really drink much anyway. if I fancy a beer, I'll buy a beer, but wouldn't be too bothered if it didn't happen. I have bought a bottle of fabric softener with a v. wide neck (to fit the shewee!) rather than trog across a muddy field in the middle of the night! Being on the coach is the thing that is making it most difficult as the amount of stuff you can take on is limited - no trollies for example. I shouldn't have to carry it far though - the furthest is from the bus station to the family camping field, which doesn't appear to be too far (one is right next door to the bus station).

    Glasto earth is great :D
I wanna be in the room where it happens
  • POPS I'm so pleased you feel better, the world will still be there for you to play with when you've caught up on yourself so take it easy until you have your energy back. I saw your photo on the other thread and it looks delicious, I thought you said you weren't a cook? Looks as though you are a good cook to me!!!Have a good one pet, Cheers Lyn xxx.

You know Lyn...if I bother I feel confident enough that most of my meals will work whether I adapt a recipe or come up with my own. And would happily share with someone. I keep saying I won't fall into the trap of simple food(you know...beans on toast etc...)and neglect a more varied choice but what's wrong with simple and if you like it?

And then again as that last meal proves...how simple was that? TBH most meals are...I was going to say I must get out of eating sandwiches but again why? Sandwiches can be a filling meal and you can come up with some lovely fillings...

I do sometimes wonder why cooking food is such a mystery and so difficult for many of us...

Thanks to my new(and better digital camera)I am putting many more images on my blog of my travels, surroundings and attempts at cooking, another sign of making progress. As it is so small, I tend to have it with me at all times when I go out.
