Phwoar - not for the faint hearted - Nigel talking about roast beef:

"On the plate - and it must be a warm one - the slices of meat fall in velvet layers, a little juice trickling from each as the meat waits for someone to pass the accompaniments. Those juices must not be squandered, but should run into something they will enrich with their savour - a pile of mashed swede the colour of winter candlelight, the frayed crust of a roast potato or a puree of parsnip.
On every plate is a patch where the juices from the beef and a gentle (and probably sloppy) accompaniment melt together to form a little island of bliss. It is a small but intense puddle of pleasure no one could bear to give away. My own Sunday roast involves the meat juices merging sexily with the sweet golden cream from a side order of pommes a la Dauphinoise, or maybe a more contemporary recipe using beetroot or parsnip instead of potato."

    :T:T:T:T:T:T:T

I can just picture my juices running!

How do you know he hasn't got his own spreadsheet :D.

I make his roast lamb today. Not really suitable for MSE. Tasted so good DS & I got stuck in before dinner then I ate all the leftovers :rotfl:.

  • Mmmm sounds delish.

I agree with this whole thread, he's my favourite chef just cos he uses normal stuff (and according to his real food book, loves a decent sausage!!) oh gosh I didn't mean that to sound that way argh :o

I blame my oh for informing me about his other way inclinedness..

I had no idea, dammit :p

I sort of had an inkling - perhaps he swings both ways?

Whatever - I love his recipes and his shows! Dont care about his orientation - I have made some of his recipes and we loved them!

:D It's nice (and oddly quite rare) to find a TV cook who bats for my team without it dominating his performance. He's got a good turn of cookery and phrasing. I always think of him as the cookery version of Alan Bennett.

I could make it better myself at home. All I need is a small aubergine...

I moved to Liverpool for a better life.
And goodness, it's turned out to be better and busier!

I agree with almost all of the above! I love his shows and while I can find loads of Ramsey, Martin and other celebrity chef cookbooks in the local charity shops - I have never seen a Nigel Slater one! and I really have my eyes peeled - I may even have to give in and (grudgingly) purchase a new one! People must hang on to them like grim death! Oh, and I havent found a Nigella Kitchen or Express one either!
He does NOT do faffing about! my kind of cooking!

I have some of his from charity shops. A big clue here is that he writes books that don't shout they are his......under the guise of publications. I could never understand what the draw was to them for me till I check ed the forewords, bits I never normally read, then saw the ones I loved were his, but I had not realised.
