    Andrew Whitley goes into quite a lot of detail about it in his book - Bread Matters. The first part of the book basically covers what his talk was about - the development of different types of flour and the Chorleywood Process which has given us the bags of tasteless pap masquerading as bread :D

  • Me too Rossy, I made me a big batch of shortbread. It's now sitting on the side cooling off. I was going to make some bread but I have used all my flour.

    I love love love my Firecracker .:)

    My new bread tin arrived today :j I brought some granary flour tonight, really looking forward to a nice tasty loaf with some mature cheddar for lunch tomorrow. I never could make granary in my bread maker, hopefully Kenny will do better.

    I ruined another granary loaf. It's my own fault, I didn't read the whole instructions so didn't see the bit that said you put the dough straight into the tin to rise, no knocking back :o

    Oh, that's a shame. I haven't tried to make granery yet, but will bare that in mind when I do.


    Popped in to Sainsburys today and was happy to find that their own brand strong white flour had dropped in price from 77p to 66p for 1.5kg. It's not often you find something that has actually gone down!

    500 gms strong white flour 1x 7gms packet of yeast
    300 mls Luke warm water
    1 tsp sugar
    1 1/2 tsp salt


    Put all the dry ingredient s in Kenny, then slowly add the water till mixed.


    Knead on no 4 for 4 mins.


    Leave to prove. ( I put mine in my oven with a bowl of boiling water on the bottom).


    Knock back when doubled. Put in the bread tin, and repeat proving process. Take out cold bowl of boiling water and bake loaf on 200c till brown and loaf gives a hollow sound when knocked.


    I find this is the best recipe for me. I have tried proving overnight but I think it gives the bread a beery taste. :)
