Pasta and broccoli bake is a firm fav in our house, especially with the kids...
Cook up some pasta and broccoli for around 2mins less than the normal cooking time - bung it in a dish with cheese sauce, tin of chopped tomatoes (cheapest you can get!) and a teaspoon of mustard. Mix it all together, add some grated cheese and stick it in the oven on gas5 for around 20mins
If we are feeling flush then we add some fried bacon and onions to the mix...0 -
My fav for those 'I don't know what I fancy' moments is what my mum calls welsh rarebit (but having looked up recipes, this isn't reallyt authentic - just lush!)
Toast 2 slices of white bread (has to be plastic bread, doesn't really work with good stuff). While its toasting, finely chop half an onion, add it to a bowl with a large teaspoon of wholegrain mustard and a large handful of grated cheddar. Mix throughly and spread on toast. Grill til golden. we mix it with brown sugar and cinamonn for a sweet lunch sometimes...

I used to make this a lot - Varsity Pie from Cas Clarke's Grub on a Grant
A tin of condensed soup - chicken/mushroom/tomato (I liked tomato best)
A tin of tuna
A tin of sweetcorn
Mix together, put in a casserole, put triangles of toast on top and sprinkle with cheese. Bake till heated through.0 -

or even better - toasty them...
but at the moment im into mint sauces.. namely mint sauce *as per sunday dinner* and mint and coriander sauce... i put it on anything.. usually meat sandwiches..0 -
