As Purple Ivy has said, pulses tend to stay tough once cooked if they are very old. You could try cooking a few and see what they're like.
If they are tough, you could always use them for blind baking pastry.

Its been safely in the fridge for all that time but somehow I forgot about it - quite how I'm not sure as it was right in front of my nose each time I opened the door!

No way, pork is one of the main meats next to chicken that you just don't mess with!!0

It's especially important to store meat safely to stop bacteria from spreading and avoid food poisoning.- Store raw meat/poultry in clean sealed containers on the bottom shelf of the fridge, so it can't touch or drip onto other food.
- Follow any storage instructions on the label and don't eat meat after its 'use by' date.
- When you have cooked meat and you're not going to eat it straight away, cool it as quickly as possible and then put it in the fridge or freezer. Remember to keep cooked meat separate from raw meat.

Actually the OP said "Best Before Date" not "Use by date"
I would give it the usual scratch and sniff test, and not automatically throw out food. If it has been correctly stored then it may in fact have improved a little.The quicker you fall behind, the longer you have to catch up...0 -
Pork does not have a "best before" date. It has a "sell by date" and a "use by date". You should not mess with pork. I think the OP has wrote "best before" in error.
Edit: If it was gammon or bacon that would be different as it is cured.0
