£7.00 per week - menu ideas

- Corned beef fritters (Can she spare 7p for a batter mix) just add water cut 1/3 of a tin of corned beef into slices, dip in the batter and fry gently on both sides serve with what is left of the tinned potatoes plus 1/3 tin sweetcorn she could use what is left of the batter to make pancakes for tomorrow's dinner
- Corned beef pancakes open pancakes out put 1/3 tin of corned beef chopped, ¼ pack cooked rice and 1/3 of a tin of peas, roll up, pour ½ tin soup over and bake in the oven for 25 mins
- Corned beef hash using mash ½ a tin of peas and 1/3 tin corned beef.
- Tuna and sweetcorn risotto using 1/4 bag of rice, a stock cube, 1/3 tin sweetcorn plus some herbs and a Tbsp lemon juice
- Pasta with ½ jar sauce mix ,½ tin kidney beans, 1/3 tin of sweetcorn
- ¼ spaghetti with remaining pasta sauce and remaining veg
If you bought her some eggs then she has the option of fried, scrambled, poached, omelette, frittata etc

I have bought a huge bag of batter mix from Approved foods and will share that with both of my twins. Will help them out as well as me.

I needed to buy some value mixed herbs in Asda yesterday and they have gone up to 28p :eek: That is a huge mark up :mad:Blessed are the cracked for they are the ones that let in the light

I was looking at prices for Tesco, to see where things were, and there Essentials Pepper which was 12p has gone up and is now 60p fr 25grms.
Tesco Soya milk has gone up from 59p last year, and was £1.09 on Friday.!
Just to name a couple of changes.
I was sorting for the Food Bank people using some of the old recipes on here, and comparing the original £7 costs. On average they come at to around £9.99 - £10.50 now.
But that's still a great way of helping them out.
I didn't get to go with the menu, but my Daughter has handed them a couple of copies of the ones that we did for her. I will wait and see if we get any feedback about it. IF she goes today to volunteer.When I die I will know that I have lived, loved, mattered and made a difference, even if in a small way.0 -

The super six this week is quite good
250g Chestnut mushrooms
Butternut squash
Pk of 3 Courgettes
250g Vine tomatoes
150g Cherries
4/5 nectarines
All at 69p
They also have iceberg lettuce at 49p, cucumber 49p, and spring onions 59p.
I have bought four of the butternut squash and have cut into cubes and frozen them for when the colder weather gets here.
The same goes for the mushrooms, which can be added to soups, bolognaise, risotto's and stews etc.
I have noticed that their beef prices have gone through the roof and that their mince has reduced in size by 50g a pack and gone up by 10p a pack :mad: They had rump steak at £3.49 and it is now £4.29 :eek: for 1 piece of steak............It seems like Aldi is catching up on the other supermarkup tricksters:(Blessed are the cracked for they are the ones that let in the light

I am considering going back to Lidl instead of Aldi, but i think they are doing the same too.

So I have come up with a few meals using this week's S6 and other prices that are low from there
cherry tomatoes are cheaper at 59p a punnet, so I will use those as a price guide
Fresh Tomato pasta (serves 4)
1 pk of spaghetti 19p
½ Pk cherry tomatoes halved 59p (29p's worth)
½ (150g) Pk danish blue cheese 99p (49p's worth)
Cook the spaghetti in boiling salted water
When it is cooked drain but leave some of the water in the bottom of the pan, then add the cheese and tomatoes and serve ............Quick, cheap and very tasy Total cost for four 97p ( 24p per person)
Mushroom Risotto (Serves 4)
Punnet of mushrooms wiped and sliced 69p
2 cloves garlic (bulb is 25p so about 6p's worth)
300g SG or risotto rice (500g is 97p so 40p's worth that is for a normal serving of 75g per person)
Vegetable or chicken stock, if you don't have any fresh then use 2 stock cubes (10p for 8 sainsbury's basics range) in boiling water made up to 500ml
A little butter
Quarter of a pack of blue cheese 25p
In a saucepan add a little butter with the crushed garlic cloves and mushrooms cook for a little while so that the butter and mushrooms take on the garlic, then make sure that the rice is well coated, add the stock a little at a time until it is creamy, serve with a quarter of the blue cheese that you have left from the pasta crumbled over the top.
Total cost for four people £1.84 (46p per person)
Butternut squash pasta (serves 4)
A little olive oil or sunflower oil if you don't have olive oil 10p
1 butternut squash, peeled and cut into chunks (69p)
2 red onions (30p) peeled and quartered
300g pasta shells or fuselli (I use fuselli because it is half the price of shells) 500g fuselli 49p (35p's worth)
2 garlic cloves peeled and sliced
what is left of the blue cheese 25p
40g breadcrumbs 10p
Heat the oven to 180 C, 160 C fan, 350 F, gas 4. Place the squash in a roasting tin and drizzle with oil, season with salt and pepper and roast for 40 minutes, adding the onions to the tin after 20minutes.
Then ten minutes before the end of the roasting time, cook the pasta in boiling salted water for 7 minutes, until just undercooked.
Drain and coat in a little more oil. Mix the pasta, squash, onions, garlic and half of the blue cheese with seasoning and a drizzle of oil. Top with more blue cheese and the breadcrumbs. Bake on the top shelf of the oven for 10 minutes.
Total cost for four people £1.85 (46p per serving)
So that is 3 main meals for four people for £4.66 or £1.16 per person
I will work on more recipes later because I have to go out now.

I agree with Mooloo. I don't like blue cheese at all. Would it be possible to use any other strong cheeses do you think?
I've got a nice block of strong red cheddar in so I might try the tomato pasta but with that instead of the blue cheese.
Thanks for all the good ideas cos I seem to have fallen in to a habit of the same meals week in week out
