  • Hi Fortune, sorry to hear you've been poorly. Hopefully you'll be back to normal ASAP.

I do happen to have a banana cake to make, and happen to have three bananas and also yoghurt, so will give this recipe a go. Did you use exactly the same quantity of yoggy as for the buttermilk?

    Take it easy, Tilly x

    Hi Tilly

yes - 150 ml of yoghurt. It makes quite a thick mixture but I just spooned it into the tin and it came out fine. I reduced the cooking time by 15 minutes though so baked for just an hour. Delicious with butter icing :D

    Thanks for the good wishes

Hi Cal - thanks for the good wishes. I'd say the sooner the better for Xmas. Just in case I have to make a few attempts - or the results aren't what was in mind and a new present has to be brought

Hope all goes well with you. You seem to be working very hard.

Glad you're on the mend, Fortune - and that linkie to the banana cake was great. I'm sure I have a recipe somewhere, but finding it is another matter, and that one is *really* simple, just right for me :) I've also seen a thing somewhere about using lemon juice in water instead of buttermilk ... will hunt and see if I can find it ...

Hi Karmacat. I was really pleased with the way the Banana Cake turned out. And you can freeze it (without the icing). I've never been able to get buttermilk locally so just use yoghurt or cream instead.

    Happy snacking!

  • ... but Mr F has got it now :( I've coddled him over the weekend though so he's not feeling too bad today.

    MS:
    • went to see our friends' band on Saturday - £30 for drinks as Mr F had his beer head on
    • a lazy Sunday. Mr F pottered in the garage and I ironed
    • started the Christmas shopping. I've ordered the main presents for the DSs and their OHs and done some further research. It does make things easier now they are living together
    • booked to spend New Year's Eve at a swanky hotel with some friends :o I'm too embarrassed to say how much it's going to cost but Mr F and I have agreed it will be our Christmas present to each other. It's black tie and there will be a 7 (yes 7!) course meal, entertainment, a live band and dancing until late. We've always spent New Year at home or at friends' house parties so it will be a real treat to do something really dressy
    • Sausage & Bean Casserole from the meal plan for supper http://www.bbcgoodfood.com/recipes/1940681/sausage-and-bean-casserole- I used hot paprika as we like spicy food and it was just the job. We had it with Yoghurt & Parsley mash. It was quite liquid so there was enough to freeze a portion and I can make the rest into soup for my lunches this week :)
    • no Step class today as I don't think I could manage it :o
    • liberated 60p from Mr F's change dish this morning. Mr Marmite is starving because I emptied him into the Poppy Collection pot last week
    • I've set today aside as I have quite a lot of admin work to get through - and I need the cash to pay for New Years :o
Mr F is away with work again this week :( I've sent him off with a cold survival kit :rotfl:

Right. Off to get myself sorted for the day. If I can get the admin work finished this morning I can spend the afternoon catching up on D0wnt0n :rotfl: There's a busy week ahead so it will be my last chance to recuperate.

    Have a good week all.
