Raspberry and lemon curd cake (from Xanthe Clay's "Recipes to know by heart" book.
Ingredients
6oz/170g caster sugar
6oz/170g soft butter
1 tsp vanilla essence
3 eggs, at room temperature
6oz/170g self raising flour
1tbsp milk, if needed
About half a 450g jar lemon curd*
A handful of raspberries*
(I normally use a bit less lemon curd (about 1/3 jar, and a few more raspberries)
* Preheat the oven to 170C/325F/Gas 3. Grease and line a 8in/20cm cake tin that is at least 2in/5cm deep.
* Beat together the sugar, butter and vanilla essence until pale and the colour of clotted cream - you can do this with an electric mixer or in a food processor.
* Beat in the eggs one at a time.
* Fold in the flour. Do this by hand or the cake may be tough.
* Spread the mixture out in the prepared tin. Dollop the top with teaspoonfuls of lemon curd and scatter a handful of raspberries over the top.
* Bake for about 40 minutes until well risen and golden brown. Cool in the tin.
* Enjoy!
I love this recipe so muchAs the cake rises, the lemon curd and raspberries sink so that you end up with almost fudgy lemon curd and raspberries inside.

That cake sounds amazing - does anyone want to make and deliver one to me? I am a disaster when it comes to baking, just cannot do it!
Just back from MW appt, all is well, very happy baby kickimg around and heartbeat all good and his head is 4/ engaged which can only be a good thing!
Just popped into work while I was in town and they all can't believe how huge I look compared to when I went on Mat leave (only 3 weeks ago!)New first time mummy to a gorgeous little boy!

MV - my measurements were quite small a couple of weeks ago (at 38 weeks) and it was looking hit and miss whether I would be allowed a homebirth - no fear though - baby has been fattening up in just 2 weeks and has added another 3 cm in just 2 weeks! The only problem now being that she is so busy fattening up even more, that she doesn't want out! So I wouldn't worry at all - its all just a guess anyway.
BB - thank you for your recipe - sounds absolutely lush - I might have a go tomorrow - I spotted some Value Lemon Curd in Tescos - only 22p and I love bargains!
I haven't made my cookies yet...been out at the garden centre all afternoon - now feeling a bit dizzy so am going to eat first and see how I feel after that. The homemade Victoria sandwich slice I had was lush.
I also think (sorry to sound gross) that bits of my plug might have come out.....! :j (of course I am not completely sure what "plug" looks like but I had some jelly like stuff appear "down there" twice today - it wasn't quite as gross looking though as the pictures I'd googled......!).0 -
Dida - that's got to be a good sign that things are moving along, could be sooner than you thought!New first time mummy to a gorgeous little boy!

Hmmm...thank you - maybe....but I have heard the plug can still mean a week or so....and I'm not sure it is a plug - despite googling......it didn't look red/brown - just like jellied snot-like! (sorry if anyone is eating dinner....!)0 -
BB - it was indeed fundal height. She had a trainee in the room with her so they both gave my belly a good feel. SHe also said that my white blood cell count was a bit on the low side and had I been ill. I may have had a cold the last time she took blood, but I can't recall being unwell.
I am sure all is fine, I just felt a bit upset (darned hormones again) and also a bit bad as I had a few sips of Sol from OH's bottle last night (we had curry and I really fancied a wee bit of lager).
I've hardly drunk this pregnancy but have had the odd small glass here and there, and that is bothering me too. I have resolved that no more shall pass my lips now!
Came home and spent 2 hours in bed (midwife's orders!), so off to pick up DS shortly from the childminder.
Dida - my plug came away over a couple of days in bits and pieces. If it looks like something you haven't seen before, then there is a good chance that is what it is (if that makes sense!)Metranil dreams of becoming a neon,You don't even take him seriously,How am I going to get to heaven?,When I'm just balanced so precariously..0 -
you know, apart from today, I have been wide awake from 5am. 5am!!! That is *not* allowed!! I woke up today at 6am
The week I had eldest I was awake from 5am every morning and absolutely starving. I got up and had some toast before trying to go back to bed for more sleep. This happened every day except Friday as I woke up with contractions and didn't get any more sleep after that!
Fingers crossed xxxNorn Iron Club member 273:beer:0 -
Oh they will love it, my girl is nearly 11 and ds is now 16months and the novelty hasn't worn off at all, she is definitely his favorite person, its so sweet to watch them together, in many ways its lovely having that age gap because she can do so much more for/with him and their bond is fantastic, although going back to the sleepless nights was very hard!! I'm worried for the holidays, dd breaks up on the 24th July and baby is due on the 25th but I'm sure all will be ok and ill have worried for nothing! Hopefully baby will get on and turn for you! Maybe the midwife will give you a few ideas next time you see her
Awwww, that's lovely! They are both so excited about meeting him.
I'm supposed to be induced at 38 weeks, 22nd July, so our little ones could be arriving at the same time! My girls finish school at the end of June so I get a couple of weeks with them before baby arrives - although we have family coming over from USA the weekend that school finishes so the girls have already decided they're spending the first couple of weeks with them!!! I'm being dumped!Norn Iron Club member 273:beer:0 -
Thanks for the recipes BigBird and Dida! The longer I am pregnant the more baking I am clearly going to have to do!
Had a lovely lunch with a friend today, and got some nice plans for tomorrow, but after that I have literally zero plans.... I think I need to make some so that I don't go completely mad!
Dida - must be a good sign the plug is starting to come away, hope it means you are not waiting much longer.
Come on overdue babies, out you come!0 -
did anyone read about this:

What a lovely idea!!I told my OH that if we knew that baby could sleep in a cardboard box then we would have saved ourselves a fortune!
I saw this and LOVE the box idea, and especially all the cool free stuff you get with it - it really is a proper 'starter kit' for having a baby, much better than a Bounty Pack!!0
