Mf, didn't you also have a recipe for some sort of lentil curry way back when, ( probably several months or years ago.) I never copied it, stupidly, but it looked fantabulous.

Well I have done nothing so far today, I have been transfixed by the Olympics, what a start to the day. Two Gold medals in the rowing.
I watched the Tennis last night as well, Murray was awesome.

This weekend I got lots of jobs done, NOT!!!!
I did not manage to do anything. I got so engrossed in the olympics, I achieved nothing. I also managed to drink far too much red wine.
Oh well I suppose it is only every 4 years.

Apparently there is now a surge is wannabe olympic champions, and all those parents out there are thinking, how am i going to afford this?
Sometimes i think the british ethos is it's the taking part which is important, not the winning. Seems to be turning round, again. Me, i always play to win. Wasn't andy m just gutted at the silver yesterday? A bit sad really. Unforced errors, and a weakness spotted / targeted. I shall say no more. I also liked the look of the courgette riosotto.
Ive never made riosotto though.
Courgette Risotto
Risotto Rice (I think it is normally 50-75g per person)
2 Courgettes grated.
Frozen Peas
Chopped Mint
Dry White wine (glass) (optional)
Large onion
1ltr of veg stock
25g Butter
Melt butter in a pan and add onion, let the onion cook for a few minutes. Then add the grated courgette and frozen peas. Cook for a few minutes. Then add the rice and stir. Pour in the wine (optional).Then add the stock and chopped mint. You can also add some mixed herbs or other herbs. Just experiment. Simmer until cooked (normally around 20-25 minutes).
If you want it more creamy you can put a bit more butter in right at the end and stir in for a few minutes. Also top with grated cheese, either parmesan or something like strong cheddar at the end, adds to the taste.
