I back up the most vital files (the ones that change a lot) to a USB flash drive twice a day, to two on-site external hard disks & a NAS box before I go home at night, my server has a RAID array and an external hard drive which takes a complete disk image every evening. Not to mention cloud storage! I own & run a computer repair company, and tell people almost daily "you've lost all your files, because your hard drive is scrap metal, and you've no backup"0

I have an external disk which I used to backup all my stuff (probably once a month), but that disk no longer works
so I think I'll be getting myself another one before my PC dies!!

Rarely to be honest, I don't tend to have much data that really matters, only things I do keep multiple copies of is things like photographs, which I store on several different hard drives and the best ones in photo albums, but that's done as soon as they're off the camera.0

I'm a Mac user but the strategy I describe should work with any computer in principle.
Email clients are fairly fiddly to back as as a separate entity. I think you'll probably find that the easiest and simplest way to deal with a potential loss of email is to back up your entire HD on a regular basis.
The way that I do this is by using a double back up strategy.
I have two HDs attached to my computer.
One of them makes an hourly incremental backup on a rolling basis, (I use the Time Machine utility [http://www.apple.com/uk/macosx/what-is-macosx/time-machine.html] in Mac OS X for this but I'm sure there are PC programs that will perform a similar function if you search for them).
The other one makes a duplicate, (and bootable - meaning I can start up from it) copy of the entire drive every night. I do this using a program called SuperDuper, (http://www.shirt-pocket.com/SuperDuper/SuperDuperDescription.html). This is a Mac only bit of software but it's brilliant and it would really surprise me if someone doesn't produce a similar bit of software for the PC.
