    When cheese is made it can be stored at (cool) room temperature for months or years before it is cut for eating. I would shove it in the fridge and give it the sniff test followed by the small taste test before eating.

    I think this is a trust your gut issue to be honest. It is warm so leaving it out will not ensure it is at it's best, but then again years ago the had no fridges did they.
    So I would put it in the fridge, monitor it and use asap. You could make, cook and freeze some cheese dishes to use it up quickly.


    You should keep cheddar cheese stored in the refrigerator at all times



    Cheese should be refrigerated at temperatures of 35 to 40 °F in the original wrapping until ready to use. Store cheese out of the airflow in the cooler so it doesn’t pick up off-flavors common in all refrigerators. If the original wrap is removed, rewrap cheese tightly with plastic film wrap or foil to prevent air pockets. Once cheese is exposed to air, mold and dehydration may occur. To protect cheese from mold, always work with it in a clean area. It will keep better if rewrapped with new plastic wrap after each time opened. To be extra cautious, double-wrap the cheese or place it back in its original container or a sealed container, if possible. Strong-smelling cheeses like Limburger should be well-wrapped and kept in a separate container to prevent odors from transferring to other foods.

    Most sites recommend that cheddar not be left out of the refrigerator for more than 2 hours. However, it is probably safe to keep unopened cheddar cheese outside of the refrigerator for up to 24 hours if it has not been exposed to high temperatures. After that, you risk food poisoning by consuming it.

    To be honest, OH has just spied them in the oven, so am not sure if the 4 sausages will live until tomorrow. As long as I can have 2 (or more likely one!) of them for my snack at work tomorrow I'll be happy..... :rotfl:

    I go with the 3 day rule for cooked meat. So i cooked gammon today (friday) - sat, sun,monday, so i would use by mon. It not you can freeze

    It has gone in the freezer and I will do a sniff and taste test when I defrost it :D

    I don't usually bother with the usual food warnings but as it had been out for such a long time, in this warm weather, I wanted others' opinions before I decided :)
