Theres a recipe in one of my old chinese cookery books thats walnut chicken.
basically, it involves coating chunks of chicken ( think nugget size) coat with flour, then egg, then roll in the chopped walnuts as a coating.
Deep fry.

Ooo, that reminds me of a recipe I tried years ago, for sweet and sour veggie "chicken", where the "chicken" was battered fried walnuts! It was amazing.
