I bought the Extra Easy cookbook as I need some inspiration for dinners this week and I really want to plan my menus and shop accordingly and just generally feel a bit more organised.
Someone at the class suggested making a quiche which sounds like a good idea. Apparently it is delicious and a really good thing to have in the fridge if you get the munchies and also freezes well. May be a good option for those that need a packed lunch - just wrap portions in cling film and freeze.
I used to make loads of SW quiches and loved them. I like them best completely cold. I used to do a vegetable one and sometimes a salmon and broccoli one. I usually slice tomatoes and decorate the top.0 -

Just an update on my weight loss....... Upped my food intake once again, had loads after cutting out loads, drank more fizzy water, ate more frequently, kept off the wii for 6 days
and hey presto ..... Lost 1 pound. I know its not a lot, but its going in the right direction, after staying the same twice and putting one and a half on, so keeping on with the plan and fingers crossed that next week I can have a better loss and feel like I am worthy again, so looking at my 5 and a half stone award pretty soon.
Total loss = 5 stone 12.5 lbs. / But now GAINED 1 STONE 1.5 LBS!!

well... i dont know how, (and i dont think i want to know) but i managed to lose 2lbs this week
:j so i have to say i went and treated myself to a small superchip from CFC - my treat for the week!
aim for next week: to lost 3lb and hit my full 2 stone award - hopefully
so how was everyones day? btw, has anyone tried the sticky chicken recipe? is it nice?I'd rather try and fail, than not try and never know

Not a fantastic day but not awful considering it was a parents evening for me .....
Breakfast - Fibreplus bar (HEB)
Snack - banana
Lunch - jacket spud, beans and cheese (HEA), small portion of sponge and custard (kids portion):o
Snack - grapes, small packet of crisps
Will need to have something else later but it will be free and not naughty!0 -

I make the SW quiche but I use quark instead of cottage cheese. (quark is a fat free soft cheese and can be used both in savoury and sweet dishes).

Syn Free KFC
10 x Chicken Drummers or 4 Chicken Breasts
1 x small jar Chicken Bovril Paste
1 x Egg
1 x Clove of Garlic crushed or garlic granules
2 x Teaspoons of Ground Black Pepper (optional)
2 x Teaspoons of Mixed Spice (optional) - I used 1tsp of chinese 5 spice instead
1 x Teaspoon of mild chilli powder (optional)
4 x Slices brown bread
2 x Teaspoons mixed herbs
Method
Place chicken drummers/chicken breasts in a deep pan fill with water. Bring to the boil and simmer for 30 mins. Drain and leave to cool. When cool remove the skin and pat dry. Cut chicken breasts into strips.
Place the bread and mixed herbes into a food processor and blend until crumbled and empty onto a large dish. Scoop out all the bovril paste into a small bowl. Mix in the egg, crushed garlic, pepper, spice and chilli until you have a gloopy paste.
Now for the fun bit, but before you start switch on the oven to its highest setting and have a baking tray sprayed with fry light on stand by. Using a spoon carefully dribble the paste all over a chicken drummer/strip then roll it in the breadcrumb mixture and place on the baking tray. Repeat until all the drummers/strips are covered.
Place the chicken in the oven and cook for 10 to 15 minutes or until the breadcrumbs have started to go brown and crisp. Remove and leave to cool. Once cool transfer to a serving plate.Mortgage Aug 22 £280,000
