want to make some for lunch during the week

This is on the recipe thread:

    Butterbean and Lentil Soup
Syn free (I think) on green. Serves 4

    1 onion
    2 sticks celery
    fry light
    1/2 tsp ginger
    1/4 tsp tumeric
    1/8 tsp cinnamon
    1/2 pint red lentils
    3 and a 1/4 pints water
    1 400g tin chopped tomatoes
    1 x 300g tin butterbeans
    salt and pepper
    parsley

chop the onion and celery (as fine or chunky as you like) and fry them in fry light until soft. Add the spices and cook for a minute or so, add the lentils and cook for another minute. Add the water and tomatoes and season to taste. Cook for 20 minutes or until lentils are tender. Add butterbeans and cook for a further 5 mins. Chop the parsley and stir into the soup before serving

I'm sure that butter beans aren't essential and you could adapt it.

I've noticed last few days the my skin, hair and nails are very dry and flakey and I'm wondering if I"m getting enough essential fats?

I'd normally use a fair bit of olive oil in my cooking but have replaced it with frylite nd everything else is fat free - anyone any tips/ advice/ experienced similar?

Perhaps I shoudl use my HEB for oil one or 2 days a week?

Rach, are you drinking enough water? You should drink about 2 litres a day to keep your skin hydrated. If you are eating enough fruit and vegetables then you also feeding your skin, hair and nails. It could just be that your body is adjusting to the new regime but it's far better for you not to have as much fat in your diet.
