Just got back from Tesco and have 2 packets of bread mixes now. Am soooooo excited that i finally got them. I'll bake them sometime this week..hopefully they are worth all the trouble i went through.:) I love bread.
ps: for those people whose bread are not turning out properlÿ:
- if the bread is too hard or not rising enough--> you need to work the dough a bit longer. kneading releases the gluten which encourages the dough to rise
- if its not rising at all --> you've got your water temperature wrong. check for warm temperature by running the water on your wrist - too hot = dead yeast, too cold = dormant yeast. you want it to be lukewarm-ish
- let the dough rise in a warmish environment, near the radiator or near the hob before shaping and baking.
- if you are making the ciabatta, you need to handle minimally after the dough have risen, coz too much handling will destroy the air pockets. its best to shape it before leaving the dough to rise.
ps: to the person who's hand mixer packed up while mixing the bread dough - i am pretty sure you cannot use hand mixers on bread dough because the mixers rotate at x number of speed per minute and bread dough is far too thick for it to rotate at that speed. you'll end up burning the motor.
for those making cakes with the mixes - avoid overbeating as overbeating will release the gluten, which is great in bread but not a good thing in cakes. gluten causes tunnelling and you wont have the light fluffy texture.

I popped to T's earlier to try and get an iPhone dock (the one I've got isn't the right one and when I try to use my Apple TV I end up pausing/starting/skipping music on the Apple TV, MacBook and iPhone all at the same time.:mad:) and there were loads of staff getting ready for tomorrow. Even the guys that work in the Tech department were stocking the shelves.:eek:0 -
Was the first person to do the quiz this morning, then set off on a 400mile round trip to spend (what was left after driving) the day with my Mum, and thought I'd come back to find myself bottom of the pile... so pleased to see I'm not!!
