  • Ok, my computer is playing up so this is coming from my smart phone. Apologies for typos in advance (clearly not as smart as it pretends to be).

    Limoncello

Serve straight from the freezer. Makes 2.3 litres (4 pints).

    -8 unwaxed lemons
    - 800 g (1 lb 12oz) granulated sugar
    - 1 litre (1 3/4 pint) vodka
    - 650 ml (1 1/4 pint) water

    1. Remove zest from lemons. Avoid the white pith, this will make the limoncello bitter. Put zest in a large pan with sugar and water. Heat gently until sugar dissolves, then turn up heat and simmer for 15 min. Remove from heat.

    2. Squeeze juice from lemons into a large bowl. Stir in sugar mixture and vodka. Cover and leave to infuse for one week.

    3. Strain into a large jug through a sieve lined with kitchen paper then decant into sterilised bottles. Keeps for up to 6 months.

    If it lasts that long.
I ended up straining it through the sieve unlined first before filtering with paper to get rid of the lemon zest. Otherwise it's v slow.

As it's not hugely strong it will freeze at a higher temperature- Limoncello slush puppie anyone? Oh and I used the flip top bottles from L8keland. It. looks vpretty with brown string and luggage type labels. Enjoy!

Crikey TWO meals a day. I am glad our Big Boy is not curled up in front of monitor reading this - our cats get 1 meal a day ( 100g wet food pouch) and the recommended amount of expensive biscuits a day and the rest they have to catch and Big Boy is at the top end of his weight chart! When it comes to dry food they are I am cats of course;) and will not even sniff at anything else - in fact they 'bury' it. Many years ago we had 3 cats they had one tin between them per day. We only switched to pouches cos I was fed up of finding tins third full of festering cat food in the fridge:eek:
I think he'll leave home if he doesn't get two meals a day. After-all he had conned me into six :o I think the meals are domestic cat sized, rather than lion sized. I really don't want to have to toss him a gazelle on a regular basis....

He is looking less chunky now, albeit quite grumpy...
So I am not going to tell them of the rich picking at Colin'scos they would be packing their little red spotted hankies and heading off south:rotfl::rotfl:
Just imagine a row of cats with spotted hankies thumbing lifts :rotfl:I'm sure colin would make them welcome, well, I'd like to think so :rotfl:

Thanks Allybee, that sounds nice and easy and delicious too. I may add it to my Christmas presents list or keep it all for me :rotfl:

    Whinge post to follow...

It is pouring with rain. :(:(

Work have messed up my pay again. Only been paid for eleven hours rather than the fifteen and half that I worked. :(:(

Because of the whole signing on thing and insurance claim I cannot officially work for more than the fifteen and half. Meaning I cannot have it added on to next week's pay. Last time it happened and was rectified the following week, the insurance didn't pay out and suspended my claim.:(:(

So I have been given the day off to make up for it. I'm not happy about it as I need every penny.:(:(

I thought maybe I'd spend the day in the garden continuing the hack it back project, but it's pouring with rain and it's forecast all day :(:(:(

Believing I would be working as usual on a Saturday, the Captain is playing gymkhanas with his young friend so I'm not needed there and it's no fun sitting in a cold wet tackroom full of miserable smoking people :(:(

I could start making Christmas presents but I don't have all the ingredients in, the jars haven't been delivered yet and I'm short of money...:(:(

I have changed the bed that colin is cowering under, the rag and bone man was ringing a bell... Once he gets over it, he's going to start demanding to be fed, despite being on diet, he won't go out because it's pouring with rain. :(:(

There I have managed a circular whinge. :)

I remember the rag and bone man, Steptoe? In fact ours used to have a horse that looked remarkably like the Captain, best not mention it to him :rotfl:I don't think he wants to work for a living. He is part shire, part cob, part goodness knows what :rotfl:
