    Hi all, I'm a long time lurker, but not a regular poster!
    My youngest son is about to have his first birthday, and of course he needs a birthday cake. Only problem is we think he is allergic to eggs (awaiting allergy testing at the hospital - so avoiding eggs until that time!)
    Does anyone have a reliable egg free sponge recipe - I do bake regularly, so if it is more complicated than a normal sponge - please still post a reply.

  • I have read that silken tofu can be used to replace egg in a recipe, never tried it though so not sure if that's any help :s Sorry!

    Thanks all will have a good trawl through later on when LO is having his nap. Looks like I'm in for a weekend of experimental baking. He cant have a birthday without a proper cake! xx

    EGGLESS SPONGE CAKE

    2 cups self raising flour
    1 tsp baking powder
    1 cup sugar
    (about 1/4 cup cocoa powder if you want a chocolate cake)

    1/2 cup oil (extra virgin olive oil might impair the taste a bit!)
    1/2 cup milk
    1/2 cup orange juice
    (if you haven't got orange juice, use water and add a couple of tbs of vinegar (even brown will do)
    2 tsp vanilla (or any other flavour you like) essence

    Sieve together the dry ingredients. Mix the liquid ingredients in a jug, then mix into the dry ingredients until it is like a batter. You can add a bag of chocolate chips to it if you want.

    This makes a 10" x 8" cake (bake @ 180c for about 40 minutes)
    OR 24(ish) small buns (bake @180c for about 15 minutes)
    OR 1 8" round cake (bake @ 160c for about an hour)

    This never fails.:D

    hi everyone,

    i've had request off the family for some sweet snacks i have most baking ingredients in except eggs and our local shop don't have any at the mo. Oh and i dont have any porrige oats so unfortunatly i cant make twinks.

    Does anyone have any suggestions what i could make i've got a total mind block at the moment none of us have any allergies so nothing to worry about there.

    Omg!! just googled to see what twinks were, definateley not what i was looking for :eek:. What are they???
