    Divas' cheap and easy chocolate cookies
    4oz/125g butter

    2oz/75g caster sugar
    1/2 tsp vanilla essence plus a drop or two!
    3 1/2oz/110g plain flour
    1/2 oz/15g cocoa powder (real cocoa powder and not a substitute as they won't taste as good)
    Milk to bind
    • Cream the butter and sugar together, adding the vanilla essence until the whole mixture is light and fluffy.
    • Sieve the flour and cocoa powder into the butter and sugar mixture and then stir in.
    • Drop teaspoons of the mixture onto a baking sheet. This makes about 15 - 18.
    • Bake in a fairly hot oven Gas mark 5 or 375f for about 15 mins or so.
    • Leave on the tray to cool for a min or so before moving to a wire rack.

    Thanks for the link!

    Have cocoa powder but no choc (OH would have already devoured it by now) or fruit in the house (that OH would eat).

    Planning to use egg to make cakes, hence need to find recipes to make as much else which is egg free!

    I often seem to have half the amount of eggs I need. I usually replace the other half with cornflour (two tablespoons per egg) and add a bit more of the other liquid if the mix seems a bit dry. Sometimes replace half even when I have enough eggs, just to save them for other things. Works fine in most recipes, unless it's relying on the egg for rise.

    I made some vanilla biscuits the other day that didn't need eggs and they were yummy.

    225g plain flour
    150g butter
    125g caster sugar
    1 tsp vanilla extract

    Rub the butter and flour together, add the sugar and vanilla, roll out to thickness of 1cm and stamp out shapes (I got 9 using love heart shapes) place on a baking tray and bake for 15-20 minutes on 180C/350F/Gas Mark 6.

    I covered mine with royal icing when cooled but they were just as nice without. :)

    How about scones?
    8oz sr flour
    2 oz butter
    3-4oz dried fruit
    couple tbsp caster sugar
    1 tsp baking powder
    milk to bind

    rub butter into flour, stir in dry ingredients, stir in milk bit by bit (c. 1/4pt). roll out to an inch or so thick, brush with milk. bake in hot oven (220-225oC) for 10-15 mins.
    serve with butter/cream & jam

    Thanks everyone,

    OH only really likes cheese scones, and really wanted cake, though I do keep meaning to make HM scones anyway! Incidentally it's easier/quicker to roll scone mix into a sausage and cut into 1" slices - no waste or hassle. :)

    OH loves choc cakes so I made these: http://forums.moneysavingexpert.com/showpost.php?p=2333718&postcount=3 Turned out well even though I had a couple of hiccups! Reckon I will be able to make them even better next time and the great thing is it's all store cupboard ingredients (and uses up the baking Stork marge from the freezer)! My mum said she has a tin of Golden syrup I can have for the store cupboard - I had to make mine with a spoonful of honey "interesting" but not awful.

    I think these will taste lovely with a hint of citrus to lift them, will probably use lemon juice (store cupboard again) and also because OH can get migraines from orange.

    I'm diabetic so the only sugar in the house is granulated as OH can't abide anything else in his coffee, so I can never find anything to make icing etc for cakes so need to use moist sponge recipes to keep him happy, and milk is reserved for coffee over anything else - even cake!

    Did try a couple of other recipes from the forum but they were awful a quick bread one that was a waste of an lb of flour as I had to chuck the whole loaf (tasted weird/not nice) and biscuits that were supposed to be shortbread, but turned out like weird pastry (still ate them though)! :o

    this site i have found fantastic atm as my daughter is doing ww2 at school this term and i have been baking recipes some from here there is one for an eggless cake and it was lovely, also made carrot cookies which were gorgeous
