    My daughter makes cakes using mayo instead of fat and eggs and they're really nice.

    I'm not sure if they would be exactly the same. My friend made a mayo cake but used low fat mayo and thought it a bit dry so made another and added extra oil. I looked on Google and I can see mayo chocolate vegan cakes so it would be worth having a go. If it didn't come out quite right you could always serve it warm with a hot chocolate sauce!

    Thanks Bettie, think i'll have a go at that! It wouldn't be wasted anyway, as you say served with chocolate sauce, or cake and custard it would be lovely anyway.

    I used the recipe posted by WCS in the end and added some chocolate chips, they have turned out lovely! A bit sticky in the middle but still scrummy!! Thanks for all your replies!! xx

    When you say sticky is it maybe because you slightly undercooked them? Or is it the recipe itself? Regardless, yummy is a great result!:j

    Well they were only small, were in for 20 mins and were brown on top so I presume theyre cooked, but then I presume a lot of things lol. Theyre better today, not as sticky and a bit crunchy on top, lovely! Went down well for my birthday picnic!

    Hi femme better to stick them with a knitting needle/skewer to make sure they're cooked. Glad to enjoyed them - I made a "victorious" today (my kids name for victoria sandwich when they were little) and rock buns using the same recipe

    Hello, I've tried a search but couldn't find the thread I need (I'm sure there must be one).

    OH is a sugar addict and we are completely out of cakes and biscuits and now have just one egg left, so please could anyone direct me to some tried and tested cake, biscuits and possibly pastry recipes that are egg free, so I can go bake him something and improve his mood!

    If it makes any difference, we don't have any nuts in the house but do have , flour, sugar, "butter" baking powder, spices, vanilla, mince meat, sultanas jam etc. We do have oats but OH isn't a big fan of oaty things. :o
    A waist is a terrible thing to mind.
