There are some great ideas on this thread so I've added to the main celeriac thread to keep the suggestions together.

Sweat:
1 tbsp olive oil
1 large onion finely chopped
1 medium head celery very finely sliced (to remove the need to string it!)
2 large cloves garlic finely chopped (optional)
When softened add
1 glass white wine to deglaze the pan
When wine has boiled add
1 medium celeriac diced
Stock to cover (marigold bouillon is best imho)
Simmer until celeriac is softened
Blend til smooth
Serve garnished with crumbled stilton and freshly ground black pepperEat food. Not too much. Mostly plants - Michael Pollan

I too have got a tin of the stuff sat on my kitchen work top and am going to open it (when I summon the courage!) and see if it is ok for portioning up and sticking in the freezer for use when required. What was your plan for 5kg of celeriac when you ordered it? I ask because we have a lot of posters asking "what shall I do with what I just got from Approved Foods"
I'd ad it to mash. I often put celeriac into roasted roots, but suspect tinned celeriac may be too soft for this.
