    Drain in it the morning in a colander and leave it most of the day then dry it with the teatowel, the squeeze it for and hour or two. Let me know how it goes.

    I vaugely remember reading quite some time ago that if - whatever it is that I've forgotten - is added to celeriac it keeps the flesh white.
    Am I talking through my hat or can you help me PLEASE?

    I'm not sure but would it be lemon juice as it stops apple, avacado, etc from going brown.
