Isn't celeriac the one that you can poach in milk to get rid of the bitterness that it can have?

Yes i thought that - but that's all i knew about it!

It's nice thinly sliced, layered in a dish, covered in cream and baked...

Use it like cauliflower in cauliflower cheese - large-dice it boil till tender and add a tangy cheese sauce, top with some grated cheddar and finish off for 10 mins or so in the oven

Delia has a recipe for celeriac and potato mash, and it's really good. You'll find it online, but it's potato and celeriac boiled until soft with a couple of peeled cloves of garlic, and then mashed up with butter and (I think) creme fraiche.

We have the UK's biggest grower/producer of celeriac only a couple of hundred yards from our front door. Their forklift truck driver told me his favourite way of using it is to make crisps.

If you google Jack Buck Growers, it will take you to their website which has quite a lot of info as well as some really good recipes. Hope that helps you to enjoy "the ugly one"!

I love it cut into chunks & roasted in the oven like roast potatoes. When it's in season we usually have potatoes, sweet potataoes & celeriac all roasted together. It's YUM.
I also slice some celeriac & some potato thinly, layer it in a shallow casserole dish, pour over some veggie stock & top with some grated cheese. It's then baked until soft & the cheese is crispy & brown. Also YUM.
