    We've been eating Sainsbobs Shortbread for weeks now as it's 'all butter'. Kallo chocolate rice cakes are palm oil free and come in new mini packs now. Other than that, I'm a bit stumped too!

    And time is too short for making our own most days. I think there was a recipe for 'Twinks' biscuits somewhere on this site. Made them yonks ago and they were good.

    Although I confess to using butter and not marg as we don't have marg (too close to plastic for my liking :o) and they're scrummy, freeze well (if they make it that far :rotfl:) and small love 'em.

    Whilst on the subject of cakes - I used this sponge recipe

    For the sponge, didn't faff with different layers, just ice cream scooped in to cupcake cases. Must confess to adding 2 tablespoons of gin and 2 of tonic instead of the milk.

    I then made my own buttercream and added 2 tbsp of gin and 2 of tonic. Did put it back in fridge for a bit before piping. Very nice ;) and I would assume passes on an AFD Brizzle given that surely the alcohol either evaporates or is in such small quantities it would register :rotfl:

    Ah thanks for links and ideas - sorry for hogging your diary Brizzle. I'm another who doesn't use marg but will give the hobnobs a try. I've seen them referenced a lot on here.

    Won't be a AFD PF :) Am taking OH out for a drink now the kiddie winks are fed. Haven't had a conversation with him in over a week :eek: which seems a tad too long!!

    Mortgage app going through although downloading and enabling the app is proving a little challenging. May go back to it tomorrow

    Make a batch every week......can confirm they never make the freezer no matter how many I make:rotfl::rotfl: Oh and yes only use butter - marg/spreads do not cross the threshold here:eek: Just started using butter made from goats milk......very nice ;)

    Aha. I call these ANZAC biscuits - they are lovely and a batch is sitting on my bench now. DD2 had a good time making them this afternoon alongside some chocolate spread which is in the fridge. We may experiment with adding almonds hazelnuts etc, but all good and much much better for orang Utans and other rainforest things.

    What else? Waiting for a pay day next week to do a money shuffle. Living on air at the moment !! Had to buy some bits for dinner. Salmon tray bake (salmon from freezer) but needed vegetables and a few things like cereal.

    Calmer today. Chatting with OH was nice yesterday. Glad we went and we only had 2 drinks so pretty low key.

    Yummy, we love ANZAC biscuits in the PG household, although we have lost our recipe and all others we have tried since haven't been as nice.

    Glad you and OH got to chat, its amazing how life can get int he way of normal everyday conversations. Mr PG and I haven't even managed to speak on the phone all week, so have only conversed via text ! I think we need to make an effort to change that !

    Thanks PG. Yes yummy biscuits and chocolate spread. Just thrown a cup of tea over the desk and about 3 devices, the chair, the floor, myself....hmm. Hope they survive otherwise an expensive day!! :eek:

    Need to plan my weekend carefully as feeling demotivated. Not sure why. Think its the bleurgh weather. But have booked tickets for me to take DD2 to the theatre this eve. Lovely treat for both of us.

    So far there have been a lot of negatives on the PPI front which fits with my memory that we never took it out, but a few need more information eg. ID and some are worded making me think that maybe there was. I am up to date with sending requested info back. 2 letters going back out again today. A shout out to Ne8t who sent me a letter saying you've never had it but also attaching a copy of the statement of account which they used to support their view. The only one to have done so, despite my asking for this in my original letter.

    The mortgage application is going through (despite some errors made by the broker which I am still trying to get rectified :( ). We are using Atom which feels very funky although to be fair they were chosen purely on price! :) A fixed rate for 5 years. 1.88%. Seems a million miles away from the 7.5% when we bought our first house! Survey booked for next week. I am quite excited about this as although we have extended the term by a year (I know, I know) we can overpay by 20% a year and we will reduce our contractual outgoings by a whopping £450 a month. The plan is for us to scoop this up and then pay £800 as a monthly OP from the time the new mortgage starts. That still leaves us on track to pay it all off and be MF in 2022. We will keep our current account with the Co0p for ethical reasons, but I can't justify keeping the mortgage there any longer. OH agrees. In addition a dear MSE friend and I were in conversation and they mentioned how expensive it is to have kids at uni, and I think we need to hold back a little as DD1 is likely to go in a couple of years. We need to have options and not have contactual payments which are too large.

    Plan for the Weekend:

    - do some more paid work
    - do an exercise class
    - meal plan for next week
    - do a packing list for next week and going on holidays
    - do some YNAB and money planning to keep ourselves in check :eek: and ensure I am militant about preserving that tax fund
    - more decluttering
    - load some items on Ebay; but put end date for auction some way off as wont be able to post
    - tidy my bedroom and make it sleepable in....looks like a jumble sale at the moment!!

    Hope everyone OK, hope to get round the diaries this weekend to catch up, long overdue!!
