I can't eat a lot of onion so often use leeks in stews / casseroles / soups etc. I'd be lost without them!
I've been looking for Frozen Leeks but can't find them anywhere I've looked. (tesco.Lidl/Asda/CoOp)0 -
Spike - I just buy a load of fresh ones when I seem them on offer / reduced .... I chop and put into "portion" sized bags and freeze (no cooking / blanching required).
They freeze really well like this and you can use them straight from frozen. HTHGrocery Challenge £211/£455 (01/01-31/03)

Onion as this is pre chopped and saves time and tears and is quite economical as there is no wastage. Yes I know I could cop but have had surgery to my hand and it`s a stage too far !0

Most veg I get fresh from the market stall, but I would never be without a packet of peas in the freezer. They're great - you can chuck a handful in so many different dishes for a bit of extra goodness and flavour, and Mr LW will eat them til they come out of his ears!:DIf your dog thinks you're the best, don't seek a second opinion.;)0

My favourite is Mediterranian vegetable mix from Iceland, I think it's £1.50, I use it with rice or as topping for veg pizza. If you feel my post has been useful, " merci" would not go amiss.

The usual suspects.
But it is great fun to investigate the freezer sections of ethnic grocery stores. Other than the odd  moment at some of the animal products, I have found frozen artichokes at pennies (take THAT, Mr Waitrose, as I cook them and chuck on lemon dressing), sweet potato (thus saving the effort of peeling and chopping the things when arthritis flares, yam, plantain, etc, etc.
Sometimes you find something that sounds good - but is horrid - but it is still cheaper than buying the aspirational fresh version in Waitrose or the nearly mouldy version in Tesco.
Have a look!I could dream to wide extremes, I could do or die: I could yawn and be withdrawn and watch the world go by.Yup you are officially Rock n Roll0 -
Usual peas and sweetcorn. I do freeze loads of veg myself that has gone a bit mushy or needs using ie onions, carrots, peppers and throw them into casseroles and curries etc (from frozen). I pick up veg that's been sold off when I can. I don't bother with blanching and only thing that didn't freeze great was broccoli (so will blanch next time). I use them generally within a month and have had no problems.0
