    We've had a Vegetarian week here and I am loving the River Cottage Veg Everyday cookbook. Tried the Onion and Beetroot Tarte Tatin's which are yummy, veg ratatouille with pasta etc etc. Made my own veggie enchiladas the other night (full of pulses) which went down very well. Oh we had stuffed peppers with some veggie filled rice this week as well. There are lots of options and my fussy OH really liked everything I came up with.

  • Can't wait to start today and shift some of this extra weight, my aim is to eat sensibly and not deny myself anything but in moderation??? Not sure how this will work put, but tired of buying low cal/fat food, so I am going to eat sensibly, here goes.....

    So far for Breakfast I have had scrambled egg, 3 slices of ham and a satsuma.

    I've been good for the past week, so I'm allowing myself a free day today. I'm still going to track, and I'll try to lessen the damage by exercising more today, but I'm not going to allow myself to stress over it. I'll be back to behaving tomorrow though. :)

    I also saw the hairy bikers programme last night - has anyone tried their cookbook? (the dieting one, obviously :) )
    I don't have much patience for following recipes, especially ones that need a lot of ingredients, but some extra inspiration might be helpful.

    I've got the recipe book, and of the recipes I've tried, they are all wonderful.

    The leek lasagne is really good, along with the baked peppers, Italian meatballs and cajun spiced chicken with potato wedges. I really want to try their paprika chicken, sweet and sour chicken and jambalaya.

    The paprika chicken is good, as is the spanish chicken :)
