Looks gorgeous, I am going to give it a go, do you think it would work OK if I put skimmed milk and reduce the amount of coconut milk?

Unsure about the skimmed milk, I usually put in half a can of coconut milk as love it but you could give it a try. I play around with the ingrediants sometimes and made it the other week with parsnips using green thai paste and was just as nice.0

Morning everyone
Today for me:
B: all bran & fruit
S: banana
L: open tuna salad sandwich, apple
S: ??? apricots and almondsHubby is cooking tonight, so its beef curry (hidden veggies) with small portion of rice and a yoghurt
I'm starting off easy trying to eat more fruit and veg, drink more water and reduce the snacking and portion sizes. Will sit down and meal plan later for the rest of the week. We still have Christmas chocs and biscuits (temptations, temptations!!!), will have to think of a way of reducing the stash.
Quick forum question, I havn't been posting for ages and have forgot, how do I go ot my last read post when I log back in as opposed to trying to remember the last page number I read??Success is a journey, not a destination0 -
I weighed this morning and I'm 13st 2.5 which is a 1.5lb gain over Christmas, it was a 4.5lb gain, but thankfully most of it came back off quickly the last few days. My goal this challenge to go from an obese bmi to overweight, I'm excited to get going again, I never thought I'd be saying that a few months ago! :j I was signed off attending the blood pressure clinic just after Christmas too, I've not had normal BP since I was in my 20's and my cholesterol was perfect.
I'm so impressed Jackieo and Ellie you both sts over Christmas, well done :T
I have the chesty cough that's going around too muddles, I'm keeping everyone awake. Hope you feel better soon and thanks fir the link, think I'll try the soup this week too x

I've tried every diet going and now just want to eat within a budget normal wholesome home cooked meals and I want this for our family too.
In 12 weeks I would like to lose 21lb please0 -
We have had a juicer over Christmas so today will be -
B fresh juice pineapple melon kiwi fruit and a slice of whole meal toast with marmite
L jacket potato, beans and salad
T roast chicken dinner
S scoop low fat vanilla ice ream and fresh passion fruit
(Bought all this fruit in a splurge so needs using up!)0 -
Morning everyone,
Well, my first official weigh in for this challenge and I am 12 stone, as I am 5 ft 3 in I am definitely too heavy.
I don't wish to become obsessed with counting everything, so I am going to concentrate on portion control, and ensuring I am eating all my fruit, veggies, protein first and watch my carb levels as I was slipping into diabetes territory a few months back (lost 7 lbs since then.)
Also need to work on my exercise/stamina as I am getting passed by much older people when walking into town, and they look so good as they have kept themselves in shape. My soon to be 80 year old Dad is much fitter and more supple than myself, plus we weigh the same :eek:

I had my first official weigh in this morning. Am not going to post the weight though as am too ashamed.:eek: Definitely well needed kick to get me started eating/living more healthily.
