would love to know how to make it into bolognaise as we buy tons of those sauces!

I've made bolognaise with tomato soup before and it was really easy. Here's what I did....

Chopped an onion and softened it in a pan
Added the tin of toms with a little sprinkle of mixed herbs
Add in your mince and bring to a simmer.
Simmer until the mince is cooked and then serve.

If I have any red wine hanging about, I'll add a dash to the toms before I pop the mince in.

Could always dice up a carrot and add that too, can probably get a couple of loose carrots for 10p?

You could also use half the bolognaise mix and turn it into a cottage pie for tomorrow using the potatoes as mash :D

Another meal you could use with your ingredients (in the Delia veggie book) is rice in a gratin type dish with cheese sauce on top and then broccoli on top of that, is quite nice!

Or a frittata/spanish omelette type thing using up the eggs, cheese, potatoes/any veg you have in stock. That works quite well cold too for lunches the next day.

You're making me hungry Kirri :)
On the potato topic, the Love Potatoes website has some great tattie recipes (lovepotatoes.co.uk) and the Love Food Hate Waste website has a really handy function where you can search by an ingredient (lovefoodhatewaste.com)
