I do remember a friend used 1 tin of tomato soup to make a tasty cake if that helps.

that was just so weird an idea, I had to google. Found this.

I also remembered a recipe using tomato soup called porcupine meatballs: basically meatballs made with rice then baked in tomato soup - recipe here. Not tried, but looks fun

  • Just got off the phone with a friend and she marinates her meat in soup over night - Campbells. She reckons it gives the meat a better texture and flavour.

You reminded me that my mother used to use Campbells condensed soup as a base for curry. Haven't found that yet but loads of good recipes (especially slow cooker ones!) on here : http://www.campbellskitchen.com/RecipeCategoryHome.aspx
Sorry if it doesn't answer your tomato and basil soup question but I'm sure that you'll find plenty of ideas on there.
(tinned soups especially Baxters are often available in Home Bargains and B&M for about 69p a tin.)

I have a recipe for tomato soup cake (which looks nicer than it sounds but I havent' tried it yet). Unfortunately i won't be back at home until tomorrow so will post it then.
I wanna be in the room where it happens
  • Good job oh liked the soup/sauce.......just found another 4 tins of the stuff.....what was I thinking? LOL! Anyway can anyone tell me yet if its ok to reheat mince in the microwave I'm thinking if we make it in the eve then I put some in a Tupperware box then I can take and heat up for lunch at work?
Mince is frozen, defrosted, cooked and added to the bol sauce then put in fridge so will it be ok to reheat? thanks!

    very intrigued by tomato cakes!
  • Yes will be absolutely fine to reheat, I always take leftover bolognaise to work the day after & reheat :0)

  • Yep, any cooked meat like that once popped into the fridge can be reheated days and days afterwards if your fridge is cold enough. Just think about how long the expiry date is on cooked and chilled ready meals in the supermarket. About a week? Something like that. As long as it's reheated to piping-hot all should be well.

Another four cans of soup! Hehe
  • Fab thanks a good lunch almost makes it worth going to work :rotfl:

Yes, I take leftover dinner to work for lunch the next day often (makes a nice change from sarnies, and it is nice to have something hot at this time of the year :D), and increasing numbers of my work colleagues do as well.

Just keep in the fridge until ready to microwave. If there isn't a fridge at work that you can use, a food flask will keep it fresh/ cold till lunchtime :)

    very intrigued by tomato cakes!

Made this one many years ago as part of a `quiz` to guess the mystery ingredients used in cakes for a fundraiser. Others were Weetabix, courgette etc. Don`t think anyone got this one though.

    Tomato soup cake

    7oz brown sugar
    1 oz margarine
    1tsp mixed spice
    1tsp cinnamon
    8oz plain flour
    10oz can tomato soup
    1tsp bicarb of soda
    6oz sultanas
    2oz walnuts

Set oven at 350f,180c or gas4. Grease and line an 8” round cake tin or 2lb loaf tin.
Cream sugar and marg, sift in spices, fold in flour and soup, add bicarb and mix well. Mix in fruit and nuts then bake for 1-1/4 – 1-1/2 hours.
